Most hotels have spent years optimising for Google.

But Google isn’t where your next guest is starting their search anymore.

They’re asking ChatGPT. They’re using Perplexity. They’re getting one answer — not a page of results.

And here’s what our data is showing across multiple markets:

Traditional search volumes for core hotel keywords are declining 50% to 90% year-on-year.

That’s not a slow erosion. That’s a structural shift.

Even more confronting? In the same audits, the properties we reviewed had zero visibility in AI-generated answers — while their competitors were being recommended by name.

Not because the product was inferior. In several cases it was exceptional.

Because the AI had no structured, reliable data to work with.

Last week I had a working lunch with Mare Treneski from Salter Brothers Hospitality.

Working lunch is generous. It was entirely desserts. Zero regrets.

The venue was Birdie Bar & Brasserie at Novotel Sydney City Centre - and if you haven’t been, add it to the list. Michelin-trained chef, cocktails named after native Australian birds, the kind of place that has a genuine personality. It’s a hotel restaurant that doesn’t feel like one.

But we weren’t just there for the food.

Salter Brothers run 19 luxury retreats, hotels and lodges across Australia - Spicers, Bannisters, Ardour - plus 29 award-winning restaurants and bars. They think seriously about where hospitality is heading. So do we.

What we talked about wasn’t marketing. It was the actual shift in how travellers discover, research and decide - and what that means for brands worth finding when search itself is changing shape.

Good conversations don’t always have tidy conclusions. But they start with the right people asking the right questions.

The Anatomy of Hospitality.

That’s what Dr Jerry Schwartz and Fiona Pryde unpacked at AHICE this week, and it landed.

The bones. The brain. The skin.

-The structure that holds everything up.
-The desire to do something great with it.
-The operator who brings it to life.
-And the GM who pulls it all together.

It’s a simple framework. But most hotels are missing at least one of those things — and you can feel it the moment you walk in.

Here’s what it made me think about.
