Ingredients
• Graham cracker crumbs — 2 cups
• Melted butter — ½ cup
• Cream cheese — 3 (8 oz) blocks

• Sour cream — 1 cup
• Eggs — 3

Instructions
• Mix crumbs and butter, press into pan.
• Beat cream cheese and sugar until smooth.
• Add sour cream and eggs, mix well.
• Pour over crust and bake at 160°C for 50–60 minutes.
• Cool and chill before serving.

🧂 Ingredients
Chicken:
• Boneless Chicken fillet — 250g
• Salt — ½ tsp
• Black Pepper — ½ tsp
• Paprika / Chili Powder — 1 tsp
• Flour — 3 tbsp
• Egg — 1
• Breadcrumbs — 1 cup
• Oil — for frying

Sandwich:
• Bread slices — 6
• Lettuce — as needed
• Tomato slices — 1 tomato
• Cheese slices — 2 to 3
• Mayo — 3 tbsp
• Ketchup / Chili sauce — 1 tbsp (optional)
• Butter — for toasting bread

👩‍🍳 Method
1️⃣ Season chicken with salt + spices.
2️⃣ Coat in flour, egg, breadcrumbs.
3️⃣ Fry till golden crispy.
4️⃣ Toast bread lightly with butter.
5️⃣ Mix mayo + ketchup for quick sauce.
6️⃣ Layer bread + sauce + lettuce + chicken + cheese + tomato.

1. Strawberry Cake

Ingredients
• 2 cups flour
• 1 cup sugar
• ½ cup butter
• 2 eggs
• ½ cup strawberry puree
• ½ cup milk
• 2 tsp baking powder
• 1 tsp vanilla

Instructions

1. Preheat oven to 350°F (175°C).
2. Cream butter and sugar until fluffy.
3. Beat in eggs, then add strawberry puree and vanilla.

Chicken Fajita Filling:
Boneless chicken (small cubes or thin strips) – 500 g
Oil – 2 tbsp (30 ml)
Onion (sliced) – 1 medium (120 g)
Bell pepper (sliced, mixed colors) – 1½ cups (150 g)
Garlic paste – 1 tbsp (15 g)
Salt – 1 tsp (6 g)
Black pepper – ½ tsp (2 g)
Paprika – 1 tsp (5 g)
Cumin powder – ½ tsp (2 g)
Chili flakes – ½ tsp (optional)
Mayonnaise – 2 tbsp (30 g)
Fresh cream – 2 tbsp (30 ml)

Assembly:
Mini pull-apart slider buns – 10–12
Mozzarella cheese – 1½ cups (170 g)
Butter – 1 tsp (5 g) for brushing top buns

Top Bun Garnish:
Light brush of melted butter
Sesame seeds sprinkle
Fresh parsley / cilantro (after baking)

👩‍🍳 Method

Preheat oven to 180°C (350°F).

Heat oil in a pan, add garlic paste, sauté for 10 seconds.

Add chicken and cook until no longer pink.

Add onion and bell peppers, cook 2–3 minutes until slightly soft but still colorful.

Add salt, black pepper, paprika, cumin powder, and chili flakes. Mix well.

Stir in mayonnaise and fresh cream, cook 1–2 minutes until the filling becomes creamy and well coated.

Slice mini pull-apart buns horizontally — separate bottom & top halves.

Arrange bottom halves tightly in a baking dish.
Spread chicken fajita filling evenly over bottom buns.

Sprinkle mozzarella cheese generously over filling.

Place top halves upright over filling.

Brush tops lightly with melted butter and sprinkle sesame seeds.

Bake for 12–15 minutes until cheese melts and buns turn slightly golden.

🧁 Custard Mini Kanafeh Cups

Ingredients:

🔸 Kanafeh Base:
Kataifi (kunafa) dough – 250 g
Unsalted butter (melted) – ½ cup (115 g / 8 tbsp)
Orange/yellow food color – optional

🔸 Custard Filling:
Milk – 2 cups (480 ml)
Sugar – 3 tbsp (38 g)
Custard powder – 3 tbsp (30 g)
Vanilla essence – ½ tsp (2–3 ml)

🔸 Garnish:
Finely chopped pistachios – 2 tbsp (15–20 g)

👩‍🍳 Method:

1️⃣ Prepare Custard
Mix custard powder with ¼ cup milk (from 2 cups) to make smooth paste.
Heat remaining milk with sugar.
Add custard mixture and cook on low flame.
Stir continuously until thick and creamy.
Add vanilla and let it cool slightly (cover surface to avoid skin).

2️⃣ Prepare Kanafeh Cups
Preheat oven to 180°C (350°F).
Cut kataifi dough with knife or scissor.
Mix thoroughly with melted butter until evenly coated.
Grease muffin tray lightly.
Press kanafeh mixture firmly into muffin cavities to form cups (base + sides).

3️⃣ Bake
Bake at 180°C (350°F) for 18–22 minutes
Bake until golden brown and crispy around edges.
💡 Do not overbake — they should be golden, not dark brown.

4️⃣ Fill & Garnish
Let kanafeh cups cool for 5–7 minutes.
Carefully remove from tray.
Fill each cup with prepared custard.
Garnish with finely chopped pistachios.

Boneless fish cubes (cod / tilapia / basa) – 300 g (about 2 cups)
Thick yogurt (hung yogurt) – 4 tbsp (120 g)
Ginger garlic paste – 1 tbsp (15 g)
Lemon juice – 1 tbsp (15 ml)
Kashmiri red chili powder – 1 tsp (3 g)
Paprika – ½ tsp (2 g)
Turmeric powder – ¼ tsp (1 g)
Garam masala – ½ tsp (2 g)
Cumin powder – ½ tsp (2 g)
Coriander powder – 1 tsp (3 g)
Salt – ¾ tsp (4 g)
Cornstarch – 1 tbsp (8 g)
Oil – 1 tbsp (15 ml)
Capsicum cubes – ½ cup (60 g) (optional)
Onion cubes – ½ cup (60 g) (optional)

👩‍🍳 Method:

In a bowl, mix yogurt, ginger garlic paste, lemon juice, spices, salt, cornstarch, and oil.
Add fish cubes and gently coat well. Rest for 20–30 minutes.

Thread fish (and veggies if using) onto skewers.

Pan / Grill / Oven method:

Pan: Shallow fry on medium heat, turning gently until cooked & lightly charred.

Grill/Oven: Bake at 200°C (390°F) for 15–18 minutes, flipping once.

Serve hot with mint chutney & lemon wedges.

For Chicken Marinade:
Chicken breast/thigh pieces: 500 g (about 1 lb)
Yogurt: ½ cup (120 g)
Lemon juice: 2 tbsp (30 ml)
Ginger garlic paste: 1 tbsp (15 g)
Mustard seeds (crushed): 1 tsp (2 g)
Fennel seeds (crushed): 1 tsp (2 g)
Nigella seeds (kalonji): ½ tsp (1 g)
Cumin seeds (crushed): ½ tsp (1 g)
Red chili powder: 1 tsp (2 g)
Turmeric powder: ½ tsp (1 g)
Salt: 1 tsp (5 g)
Oil: 1 tbsp (15 ml)
Optional for grilling:
Butter / oil for basting: 1–2 tsp (5–10 ml)

👩‍🍳 Method:

Prep the chicken: Wash and pat dry 500 g chicken pieces. Make small slits for better marination.

Make the marinade: In a bowl, mix yogurt, lemon juice, ginger garlic paste, crushed mustard, fennel, cumin, nigella seeds, red chili, turmeric, salt, and 1 tbsp oil.

Marinate: Coat chicken pieces with the marinade. Cover and refrigerate for at least 2 hours (overnight for best flavor).

Cook:
Grill / Oven: Preheat oven/grill to 200°C (400°F). Place chicken on skewers or tray. Bake for 15–20 min, flipping halfway. Brush lightly with butter/oil.

Pan / Stove: Heat non-stick pan, lightly oil, cook on medium heat 8–10 min each side until golden and cooked through.

1️⃣Zaatar Manakish (Thyme Flatbreads) 🌿🥖

Ingredients:

Filling:
1/2 cup dried zaatar (thyme mix)
1/4 cup sesame seeds
1/4 cup sumac
1/2 cup olive oil

Dough:
3 cups flour
1 tbsp instant yeast
1 tbsp sugar
1 tsp salt
1/2 cup olive oil
1 cup warm water

Instructions:

1. In a large bowl, mix flour, yeast, sugar, and salt.

2. Gradually add olive oil and warm water, kneading until smooth and elastic dough forms.

3. Cover and let rise in a warm place for 1 hour, until doubled in size.

4. In a small bowl, mix zaatar, sesame, sumac, and olive oil for the topping.

5. Divide the dough into small balls. Roll each into a circle on a floured surface.

6. Spread the zaatar mixture evenly over each circle.

7. Preheat the oven to 200°C (390°F). Place the manakish on a baking tray.

8. Bake for 10–15 minutes, until golden. Serve warm.

2️⃣Cheese Manakish 🧀🥖

Ingredients:

500 g flour
1/2 tsp sugar
2 tsp instant yeast
1/2 tsp salt
300 ml hot water
2 tbsp oil
350 g cheddar cheese

Instructions:

1. Sift the flour and yeast into a bowl.

2. Add salt and sugar, mix well.

3. Make a well in the center and pour in the hot water.

4. Knead with your hands until a smooth, elastic dough forms.

5. Brush the dough with oil, cover, and let rise at room temperature until doubled in size.

6. Roll out the dough on a floured surface and cut into small circles with a cookie cutter.

7. Place the circles on a lightly oiled baking tray.

8. Make small holes in the center with a fork and add some cheese.

9. Fold the edges inward to prevent the cheese from spilling during baking.

10. Bake in a preheated oven at medium heat until golden and the cheese melts. Serve warm.

3️⃣Cheese Manakish with Muhammara 🌶🧀

Dough Ingredients:

1 kg flour
1 tbsp instant yeast
1 tsp sugar
1 tsp salt
3 tbsp vegetable oil
3 tbsp powdered milk
2 tbsp yogurt
Warm water, as needed

Muhammara Topping Ingredients:
1 onion, finely chopped
3 tomatoes, chopped
4 tbsp olive oil
1 tbsp sesame seeds
1 tbsp black seeds (nigella)
Chili, to taste
Cheese, as desired (mixed cheeses)

Instructions:

1. In a mixing bowl, combine all dough ingredients until a soft, non-sticky dough forms. Cover and let rest.

2. Heat olive oil in a pan, add onion, and sauté for 1 minute.

3. Add tomatoes, sesame, black seeds, and chili; stir well to combine.

4. Divide the dough into equal balls, roll out on a floured surface.

5. Spread the muhammara mixture over each dough circle and sprinkle with mixed cheeses.

6. Place on a baking tray and preheat the oven to 180°C (350°F).

7. Bake until the dough is cooked and the cheese is melted. Serve hot.

Boneless chicken (finely chopped) – 250 g (1½ cups)
Onion (finely chopped) – 3 tbsp (45 g)
Green onion / spring onion (chopped) – 2 tbsp (20 g)
Garlic (minced) – 1 tbsp (10 g)
Black pepper – 1 tsp (3 g)
Paprika – 1 tsp (3 g)
Salt – ¾ tsp (4 g) or to taste
Soy sauce – 1 tbsp (15 ml)
Egg – 1 medium
Cornstarch – 3 tbsp (24 g)
All-purpose flour – 2 tbsp (16 g)
Baking powder – ½ tsp (2 g)
Fresh coriander / parsley (chopped) – 2 tbsp (10 g)
Oil – for shallow frying or brushing in air fryer

Method

1️⃣ Mixing
In a bowl, combine chicken, onion, green onion, garlic, salt, pepper, paprika, and soy sauce.
Add egg and mix until sticky.
Fold in cornstarch, flour, and baking powder until thick batter forms.
Add fresh coriander/parsley and mix gently.

2️⃣ Shallow Frying (Traditional)
Heat 2–3 tbsp oil in a pan over medium heat.
Drop spoonfuls of mixture and flatten slightly.
Fry 3–4 minutes each side until golden brown and fully cooked.
Drain on paper towel. Serve hot with chutney or sauce.

3️⃣ Air Fryer Method (Healthier Option)
Preheat air fryer to 180°C / 360°F for 3–5 minutes.
Lightly grease the basket or use parchment paper.
Scoop mixture into fritter shapes; lightly brush/spray with oil.
Air fry 10 minutes, flip, brush oil again, air fry 6–8 minutes until golden and cooked.
Let rest 2 minutes before serving for extra crispiness.

Thick yogurt – 4 tbsp (100 g)
Ginger garlic paste – 1½ tbsp (22 g)
Mustard oil – 2 tbsp (30 ml)
Green chili paste – 1½ tsp (7 g)
Roasted gram flour (besan) – 2 tbsp (20 g)
Paprika or Kashmiri chili powder – 1½ tsp (3 g)
Roasted cumin powder – 1 tsp (2 g)
Roasted coriander powder – 1 tsp (2 g)
Garam masala powder – ½ tsp (1 g)
Black pepper powder – ½ tsp (1 g)
Salt – 1¼ tsp (7 g) (or to taste)
Lemon juice – 1 tbsp (15 ml)
Oil – 1 tbsp (15 ml)
Charcoal – for smoke (optional)

👩‍🍳 Method

Lightly squeeze excess moisture from mince.
Add yogurt, ginger garlic, mustard oil, green chili, all spices, salt, besan, lemon juice, and oil.
Mix gently until combined — avoid overmixing.
Cover and marinate for 4–6 hours (overnight best).
Shape kababs onto skewers or form long kababs.
Grill on BBQ, oven, or pan at medium heat until cooked and lightly charred.
Give coal smoke (dhungar) for 2 minutes for authentic Bihari aroma.

🌿 Homemade Biryani Masala

Homemade Biryani Masala – perfectly balanced spices with an authentic aroma. Your biryani will smell and taste irresistible! 😍🍛

Makes approx. 100 g

Ingredients:
Coriander Seeds – 25 g (2 tbsp)
Cumin Seeds – 10 g (1 tbsp)
Fennel Seeds – 5 g (1 tsp)
Black Peppercorns – 5 g (1 tsp)
Green Cardamom – 8–10 pods
Cloves – 6–8
Cinnamon Stick – 2-inch piece
Star Anise – 1
Mace (Javitri) – 1 small piece
Nutmeg – ½ tsp (freshly grated)
Bay Leaves – 2
Dry Red Chilies – 8–10 (adjust to taste)
Dry Curry Leaves – 6–8 leaves, torn into small pieces
Turmeric Powder – 5 g (1 tsp)
Kashmiri Red Chili Powder – 10 g (2 tsp)
Ginger Powder – 2 g (½ tsp)
Garlic Powder – 2 g (½ tsp)
Salt – 8 g (1½ tsp, adjust if needed)

Method:

Dry Roast Whole Spices:
In a pan over medium flame, dry roast coriander seeds, cumin seeds, fennel seeds, black peppercorns, cardamom, cloves, cinnamon, star anise, mace, and bay leaves until aromatic (~3–4 mins).
Cool completely.

Grind to Powder:
Grind the roasted spices in a spice grinder to a fine powder.

Mix with Ground Spices & Curry Leaves:
In a bowl, add turmeric powder, Kashmiri red chili powder, ginger powder, garlic powder, salt, and torn curry leaves. Mix thoroughly.

Storage:
Store in an airtight jar in a cool, dry place.
Lasts 3–4 months without losing aroma.

Usage:
Use 2 tbsp per 1 kg mutton for marination.
Works with chicken or vegetable biryani too.
