Cooking a classic omelet is a dish known to make even chefs cry, but who knows why? Yes, getting a lovely soft rolled takes some care but cooking it is straightforward, bearing a few things in mind before you start.
The classic omelet takes no time to cook; there is a temptation to cook the omelet until it is set throughout - NO. This is the most common mistake; the egg inside needs to be set but not cooked. The outside will cook in the hot pan, and once rolled, the heat from this will continue to cook the eggs, so when you cut into it, it will be the tiniest bit soft, the cheese melted, and altogether delicious.
The second mistake is to not overbeat the eggs before adding them to the pan. They should never be beaten. This will introduce too much air, and the eggs will cook very quickly and become tough; and contrary to what some say, a classic omelet should not include any milk.
The ham or cheese you use is up to you and can be varied to your liking. Making an omelet is a great way to use leftover ham or gammon, switching the flavors between smoked or unsmoked. With the cheese, choose a good melting cheese; cheddar is probably one of the best but try a grated Gruyere with its strong flavor, or a softer cheese like a Feta, which will give you a creamier, fluffier omelet. Parmesan is and so works well in an omelet, but is salty, so lower any additional salt.
Serve the omelet immediately onto a hot plate; if you can't serve it immediately, cover it with another warmed plate, not in the oven, or it will continue to cook.

When it comes to fall desserts, apple crisp is a must. Crispy, crumbly, and full of fruit, it's a cinnamon-scented decadence that is the only way to follow any autumnal meal. Unfortunately, apples are off limits on a keto plan, because even though they are high in fiber they are also high in carbs.
Thanks to myriad substitutions, this keto apple crisp is low carb, grain free, and sugar free. For the filling, we use zucchini to closely mimic the texture of apples. Their flavor is subtle enough that, while it won't fool an apple-loving crowd, it will certainly satisfy them. For the crisp topping, we use a combination of almond flour and coconut flour that results in a texture more like a crisp than a crumble due to how the butter binds and melts with the gluten-free keto flours. Pumpkin pie spice adds a warming aroma and enhances the flavor of the other ingredients.
Bake this keto apple crisp while you eat dinner, then serve it hot out of the oven with a scoop of homemade keto ice cream or a store-bought variation. Even better, serve the crisp chilled.

Keto Egg Salad
Eggs are a keto staple because they have fat and protein but hardly any carbs. Egg salad's chief ingredient besides hard boiled eggs is mayonnaise, which is a perfect keto food. Mayo has no carbs, but does offer a substantial amount of fat per tablespoon.
We use bacon for a crunchy, salty addition instead of celery, and avocado for more robust creaminess and fat. Our enhanced keto egg salad has less than 3 grams of carbs per serving. The recipe is low carb as well as gluten-free. It's high in protein and can serve as vegetarian if you omit the optional bacon. Note that if you opt to remove the avocado from the egg salad, you can also skip the lemon juice. Its main purpose is to keep the avocado from browning too quickly and discoloring the salad.
This quick and easy egg salad will keep well for several days if you make it ahead for meal prepping. It's a good appetizer when served with crudites or keto crackers, and stands up nicely to a keto flax bread or keto almond flour tortilla for more of a standard sandwich preparation.
