The Môn & Only

Hello.

Well now that the summer rush is over and the Mon & Only blowing up to nearly a 1 MILLION views it's been a crazy but amazing summer doing things I didn't even plan on doing without any prior experience.

With working away at sea, being a single dad and doing the Mon & Only without really a full day off in 3 months I'm going to take a couple weeks away and go on holiday and reset.

I know it's only 3 months but with what I've learnt in such a small time I can't keep doing the business for free, I need to make the business viable and bring in a small profit to invest in what I do as I was paying for everything out of my own pocket.

I want to invest in better equipment and better, facilities which in the long run will help me improve my content and improve my quality of customer service.

So my step back for a couple of weeks is too reset, learn from mistakes and move forward because if I'm going to do it I'm going to do it properly.

Happy to hear of any feedback or advice on moving forward.

Ive been granted SPECIAL access!!

Hello everyone please read and share.

As much as I love doing the Mon & Only, behind the camera I feel I have more to give.
With Anglesey's summer tourism coming to an end most businesses take a breather and reset, some businesses thrive but some do struggle and with how hard it can be to maintain during winter periods it can get tough.

I want to use my Experience to help and support in any way I can or you see fit,please see below my relevant experience that might help you.

Senior designated regional chef - for 6 nationally operated restaurants ( New world trading company / living ventures

Head chef & chef manager - London for a 2 Michelin star chinese chef & also leading pan Asian restaurant in Leicester square

Senior sous chef - bacaro Italian tapas - Liverpool.

Operations head chef - restaurant group & CPU (central production kitchen)

With these roles I gained disapline, consistency, and a passion to move a business forward.

I have experience in -

Menu writing & development
Menu costing
Stock management (zonal acquire)
P&L profit and losses
Gross profit & cost of sale management

I can design menus where we can achieve menu GP winners, utilise ingredient and prep waste into profit earning dishes.

I want to help, I want a business to open not close
