What makes Croatian truffles so incredibly expensive & rare? They aren’t and can’t be farmed. They grow wild & only at the base of European hazelnut trees in this region. White truffles only stay fresh for 5 days & black truffles for about a week. After that, they begin to lose their flavor. In theory, to get the best experience, you want truffles served straight-out-of-the-ground fresh. In Istria, you’ll find three varieties of black truffles, as well as the much rarer white truffle. And, here’s the fun part...it’s usually the truffle pups who do the finding. It’s the male pups who have the best sense of smell!
The Croatian Truffle is, indeed, premium grade and yet the country & its people are it full of snobbery, intrigue and astronomical prices found in Piedmont or in the Perigord region of France.
Croatian truffles, especially the Austrian Truffles, have for decades made their way to the Italian market & been sold as the “Alba Truffles!” The locals say that has translated into little incentive to make their product famous, since hunters earn so much supplying Italy in a shady trade made possible by Istria’s proximity to Piedmont.
