Rosbora:

Here’s a sweet Bengali mishti to uplift your festive mood!

A) Ingredients:

- ½ cup semolina (suji)
- 1 ½ cup milk
- 1 tbsp ghee
- ¼ tsp cardamom powder
- 2 tbsp milk powder
- ¼ tsp baking soda

For syrup:

- 1 cup sugar
- 1 cup water
- ¼ tsp cardamom powder

😎 Method:

1. In a frying pan heat 1 tbsp ghee and roast the semolina on low flame for 4-5 minutes.

2. Gradually add milk and mix continuously on low to medium flame until the mixture thickens and starts to separate from the pan.

3. Leave aside the mixture and let it cool for a few minutes.

4. Once the mixture cools transfer it into a large bowl. Add cardamom powder, milk powder and baking soda and knead for 6-7 minutes to form a soft dough. If the dough feels dry add a little milk and knead.

5. Take small portions of the dough and create small flat round shapes with almost ½ inch thickness. Deep fry them on medium heat until they turn golden brown.

6. For making syrup, heat the sugar and water in a pot and stir continuously until the sugar dissolves. Add cardamom powder and mix well. Set it aside once a slightly sticky syrup forms. A dash of lime juice can be added to prevent the syrup from crystalizing.

7. Transfer the fried semolina boras into the sugar syrup. Make sure of coating them well with the syrup. Cover and rest for 2 hours so the syrup (ros) gets absorbed inside the boras.

8. Ready to enjoy!
