Commercial Chin Chin Recipe

Ingredients:
- 10 kg of all-purpose flour or 66 cups
- 2 kg of granulated sugar or 10 cups (adjust based on desired sweetness)
- 1 kg of margarine or butter or 5 cups(for that crunchy, rich texture)
- 1.5 liters of whole milk or 6 cups (or powdered milk dissolved in water)
- 10 large eggs (optional, but great for flavor and binding)
- 1 tablespoon of baking powder (for a slightly puffed texture)
- 1 tablespoon of ground nutmeg (optional, for a warm aroma)
- Cooking oil (enough for deep frying)

Procedure
- In a large mixing bowl, combine the flour, sugar, baking powder, and nutmeg.

- Add the margarine or butter to the dry mix and rub it in until the mixture resembles fine breadcrumbs.

- Create a well in the center, then gradually add the milk and eggs. Mix until you form a smooth, firm dough. Be careful not to overwork it.

- Roll out the dough on a floured surface to your desired thickness (not too thin or too thick).
- Use a sharp knife, pizza cutter, or a specialized Chin Chin cutter to cut into small, bite-sized pieces.

- Heat your oil to around **170Β°C – 180Β°C (340Β°F – 360Β°F)** in a deep fryer or large pot.
- Fry the dough pieces in batches, stirring occasionally, until golden brown.
- Remove with a slotted spoon and drain on paper towels.

- Allow the Chin Chin to cool completely before packaging to maintain crunchiness.

EGG WHITE FONDANT

1kg icing sugar
Egg whites from two eggs
2 tbs glucose
5 tsp CMC
1 - 2 tbs water, depending on the size of the eggs

Mix in your egg white and glucose first in your icing sugar, add your water as needed. If your eggs are large, you may omit water, if they are small, add 1tbs of water at a time.

Note: When I make my fondant, I don't mix all the icing sugar with the liquid. For example, If I'm making 1kg icing sugar, I remove 300g and set aside. This is what I use to knead. I add CMC to 700g, then add in the liquid. This helps me monitor the consistency of my fondant.

HOW TO PRESERVE ZOBO DRINK WITHOUT REFRIGERATOR (1 month shelf life)

Ingredients
- 2 cups dried hibiscus leaves (zobo leaves)
- 1 large pineapple (peeled and cut into chunks)
- 1 thumb-sized ginger (peeled and grated)
- 1-2 cloves (optional)
- 5-6 cups water
- 1-2 cups sugar (to taste)
- 1-2 tablespoons pineapple flavoring (optional)
- Fresh fruits for garnish (e.g., pineapple slices, orange slices)

Preservation
-1 tsp bicarbonate of soda
- 1/3 cup warm water

Instructions
- Thoroughly rinse the dried hibiscus leaves to remove any dirt or impurities.

- In a large pot, add the hibiscus leaves, pineapple chunks, grated ginger, and cloves (if using).
- Pour in the water and bring to a boil over medium-high heat. Once it reaches a boil, reduce the heat and let it simmer for about 20-30 minutes, or until the liquid turns a deep red color.

- Remove the pot from the heat and let it cool slightly. Strain the mixture through a fine sieve or cheesecloth into a large bowl to remove the solids.

- While the drink is still warm, add the sugar and stir until it is completely dissolved. Adjust the sweetness to your taste.
- If using pineapple flavoring, add it at this stage and mix well

Add bicarbonate of soda in water dissolve it properly and to your Zobo drink, bottle it while still warm .

Keep outside the refrigerator it can last for a month without refrigerator
