ВКУСНЫЙ ДОМАШНИЙ ТОРТ С ВИШНЕЙ.
ДЛЯ БИСКВИТА (диаметр 22 см):
яйца - 4 крупных,
сахар - 250 грамм,
мука - 200 грамм,
масло растительное -130 грамм,
вода -100 мл,
какао - 40 грамм,
разрыхлитель и сода - по 1 чайной ложке ( с горкой) ,
соль - 0,5 чайной ложки,
можно добавить щепотку ванилина.
В отдельной посуде смешать 150 грамм .сахара, какао, воду и растительное масло. Довести до кипения, постоянно помешивая. Снять с огня и остудить эту смесь.
Белки яиц отделить от желтков. Белки взбить с солью и 100 грамм сахара до крепких пиков. Желтки ввести в остывшую шоколадную массу и тоже взбить. Смешать в отдельной посуде просеянную муку, ванилин, соду и разрыхлитель. Всыпать эту смесь в шоколадно-масляную и размешать до однородности. Потом начнем вводить сюда наши белки, аккуратно их размешивая. Масса должна стать однородной. Духовку нагреть до 160 градусов. Форму застилаем пекарской бумагой или фольгой. Смазывать ничем не надо. Тесто перелить в форму, накрыть верх фольгой, и поставить в духовку, уже нагретую .Через 35 минут, я сняла фольгу сверху и выпекала до готовности. Готовый бисквит достать из духовки и остудить в форме минут 10. Потом достать его и дать ему остыть при комнатной температуре. Далее его надо завернуть в полиэтилен и убрать в холод на 5 часов.
Потом бисквит разрезать на две части.

ДЛЯ ВИШНЕВОЙ ПРОСЛОЙКИ (диаметр 18 см):
250 грамм ягод вишни (у меня из банки),
100 грамм сока вишни,
180 грамм сахара,
13 грамм желатина,
80 грамм холодной воды.
Желатин заливаем в воде и даем ему набухнуть. Ягоды пробиваем блендером, смешиваем с соком и сахаром. Ставим на плиту и доводим до кипения. Снимаем с плиты и вводим сюда набухший желатин. Размешиваем до однородности. Дно формы хорошо затягиваем пищевой пленкой. Выливаем массу и убираем в холодильник до полного застывания. Готовое желе с помощью ножа извлекаем и применяем в начинке торта. Его также можно заморозить, а потом применять по назначению.

ДЛЯ КРЕМА-МУССА:
350 грамм сливок 30-33%,
250 грамм варенного сгущенного молока,
200 грамм горького шоколада,
13 грамм желатина,
80 грамм холодной воды.
Желатин заливаем водой на 20 минут. Потом в отдельной посуде смешиваем горький шоколад и 50 грамм сливок. Разогреваем их, чтобы шоколад растопился и стал однородным. Соединяем шоколадную массу с варенным сгущенным молоком и взбиваем до однородного состояния. Желатин подогреваем и тоже вводим сюда, все размешиваем до однородности. В отдельной посуде немного взбиваем 300 грамм хорошо охлажденных сливок. Потом соединяем обе массы и размешиваем до однородного цвета.

СОБИРАЕМ ТОРТ.
Бока формы (22 см) прокладываем плотной ацетатной пленкой не ниже 10 см. На дно выкладываем первый шоколадный корж. По желанию его можно немного пропитать сладким какао. Далее на него выкладываем 360 грамм крема. Убираем в морозилку на 10 минут. Далее на эту часть крема выкладываем вишнёвую прослойку и сверху остатки крема -мусса. Немного пропитываем вторую часть бисквита и выкладываем пропитанной стороной на крем. Слегка сверху придавливаем. Накрываем пленкой и убираем в холодильник для стабилизации на 4 часа.
Верх торта можно залить шоколадной глазурью или украсить по желанию.
Застывший торт извлекаем из формы, нарезаем и пробуем.

In 1908, the New York Times ran a story calling a dog in Paris a fake hero. But before you jump to the canine’s defense, you might want to hear why. It turns out he was a bit of a bad boy.

Dog Saves Child
As the story is told, a heard a child screaming for help one day by the Seine river in Paris. And like a proper hero, he jumped in to rescue the poor kiddo.

Of course, he was greatly rewarded.

It turns out that the slab of meat he received as a reward was something he didn’t want to give up. So he presumably figured he’d just wait by the Seine to see if his heroics could be of service again. And it didn’t take long for another child to fall in.

Once again, the dog saved the child and was rewarded.

Now, remember the story of Pavlov’s dogs.

“Fake hero” dog pushes children
Eventually, someone noticed that a suspicious number of children were falling into the Seine, and always nearby a certain meat-loving canine. At first, people thought there was some sort of child-drowning criminal wandering about the neighborhood.

It didn’t take long for people to figure out that the dog eventually started pushing kids in if he had to wait too long for a rescue and reward scenario to present itself.

That’s what landed him on the front page of the NYT in a story titled “DOG A FAKE HERO.”

Now, whether the story is true or not, we can’t say. We only know what the NYT reported. Sadly, they didn’t follow up on what may have happened to the dog nor did they mention whether or not any of the children noticed that they took a swim courtesy of the canine.

Migratory monarch butterflies (Danaus plexippus plexippus) are a subspecies of monarchs, and while you may have seen them in your backyard growing up if you’re over 40, chances are you’ve seen a lot less of them lately. Migratory monarchs are now endangered and could go extinct.

The iconic monarch butterfly
These iconic American butterflies are black and orange. Like other monarchs, their larvae feed on only one plant – milkweed. Climate change and fires have destroyed much of the milkweed in America and conservationists are encouraging people to plant more.

The butterflies are also threatened by pesticides, herbicides, deforestation, and urban development. In fact, they’re so threatened that a Switzerland-based conservation organization that monitors the status of wildlife – the International Union for Conservation of Nature (IUCN) – has added them to the list of threatened species.

They join around 41,000 other species that could become extinct without intervention.

Migratory monarch populations
Migratory monarchs in the American West face the largest extinction risk, having lost 99.9% of their population over the last 40 years, according to Smithsonian Magazine (cited below).

The number of Western migratory monarchs went from ten million in the 1980s to 1,914 by 2021. That may not be enough butterflies to keep the population alive.

But according to Smithsonian Magazine, there’s still hope:

“To help boost monarch numbers, scientists and conservationists recommend planting more milkweed and nectar flowers, maintaining forests and limiting the use of pesticides and herbicides in the butterflies’ range, report CNN’s Madeline Holcombe and Jalen Beckford.

​​“People recognize the monarch,” Anna Walker, an entomologist at the New Mexico BioPark Society who led the assessment, tells the Washington Post’s Dino Grandoni. “People love the monarch. So that gives us an opportunity to do the outreach and get people on board.”

The summer of 1518 was a weird one in part of the Holy Roman Empire. A plague of sorts broke out in July in the city of Strasbourg, and its main symptom was giving people the uncontrollable urge to dance.

It all began with a woman called Frau Troffea, who was seen stepping out into the street and twisting and twirling all alone to no music at all. Multiple sources say she danced for a week.

When others joined her, it wasn’t to keep the party going. They couldn’t help themselves. They danced until they literally couldn’t dance anymore – either because their feet were broken or bleeding or because they passed out or even died of a heart attack.

It’s said that by August, nearly 400 because afflicted with the mysterious and destructive desire to dance themselves to death. By September, officials had taken the remaining dancers to a mountain shrine…allegedly to pray away their affliction.

To say doctors handled it poorly is both an understatement and a bit unfair, considering the world had no germ theory of disease yet. Some blamed foot, others called it a “hysteria,” and some local physicians blamed it on “hot blood” that made bodies try to gyrate out the fever. They even had stages built, and professional dancers brought in to try to ease whatever was happening in people’s bodies and minds. Not surprisingly, it didn’t work.

In what probably seemed like a good idea at the time but feels a bit cringy to think about now, the town hired some backup musicians. That didn’t work either (and it probably made things worse).

A dance marathon sounds like fun and games until people start dying, and reports say they did by the dozens.

Similar dance plagues happened throughout the empire, but none were as extensive and well-documented as the 1518 incident.

The New Yorker just published an article that made us long for a doctor’s visit that ended in a “spa cure.” They say:

“Let’s say that you suffer from arthritis, arthritis, bronchitis, bursitis, colitis, diverticulitis, endometriosis, laryngitis, osteoporosis, rhinitis, sinusitis, tendonitis, diabetes, Parkinson’s disease, Raynaud’s disease, multiple sclerosis, angina, asthma, sciatica, kidney stones, sore throat, dizziness, spasms, migraines, high blood pressure, heart palpitations, back pain, earaches, vaginal dryness, menstrual cramps, itching, bloating, swelling, constipation, gout, obesity, gum disease, dry mouth, psoriasis, acne, eczema, frostbite, hives, rosacea, scarring, stretch marks, or varicose veins, or that you are depressed, trying to quit smoking, or simply dealing with a lot of stress. You also, crucially, live in France. You go see the doctor. She writes you a prescription for a thermal cure, indicating to which of the country’s hundred and thirteen accredited thermal spas you will be sent. Then you fill out a simple form and submit it, along with the prescription, to the national healthcare service. Your application is approved—it almost always is—and you’re off to take the waters.“

Ok, first of all, we have a hard enough time getting our medical care approved by our insurance company, we’d love to see their response to a thermal spa receipt for a sore throat. (Seriously, we mean that – we want it on camera.)

Yes, yes, the tax money. Of course. This is not an economic fun fact, because none of that discussion is fun. This is about notions of health and well-being – and you can call them kooky or brilliant, but it’s hard to deny that it’s also fascinating that these treatments – which date all the way back to the ancient world – are still practiced (and paid for) as part of mainstream(ish) medicine. Frankly, it dovetails nicely with much of what we know about the effects of stress and poor mental health on our physical health.
