Roatán is one of the Honduras Bay Islands in the Caribbean Sea. Located near the largest barrier reef in the Caribbean and the second largest barrier reef in the world it is a major scuba diving destination.

Diving sites are teaming with sea life and are rarely affected by weather, making them some of the most ideal beginner sites available. Nearby Utila island boasts the cheapest Open Water courses in the Caribbean.

Located just off the Yucatan Peninsula, Cozumel is a popular destinations for scuba diving and snorkeling. The underwater world around Cozumel was discovered by Jacques Cousteau in 1959 who called it one of the best diving areas in the world. Since that time Cozumel has become a National Marine Park to protect the delicate balance of it’s beautiful coral reefs and amazing variety of tropical fish.

The marine park offers the diver some of the best visibility that one might encounter. Visibility often reaches distances of 30 meters (100ft). or more. Perhaps the most distinctive part of this location is the Splendid Toadfish, a bright, colorful fish species found nowhere else on Earth.

🍞 DUTCH APPLE BREAD 🍞

Apple Bread made from scratch with butter, sugar & plenty of fresh apples. Topped with a cinnamon Streusel & drizzled with warm vanilla glaze, it’s amazing.

Ingredients:
1/2 cup softened butter
1 cup granulated sugar
2 eggs
1/2 cup milk
1 tsp vanilla extract
2 cups all-purpose flour
1/2 tsp salt
1 tsp baking powder
1 1/2 cups diced peeled a green apple
1/2 cup chopped walnuts or pecans

Topping:
5 TBSP cold butter
1/3 cup flour
2 TBSP granulated sugar
2 TBSP brown sugar
2 tsp ground cinnamon

Vanilla Glaze: Whisk all ingredients together until smooth. Set aside.
1 TBSP melted butter
1/2 cup powdered sugar
1 TBSP milk
1/4 tsp vanilla extract

Instructions:
Preheat oven to 350 degrees F. Line a bread pan with parchment paper or spray with non-stick cooking spray.
Cream butter and sugar in a mixing bowl. Add in eggs, milk, and vanilla and stir to incorporate. Mix in flour, salt, and baking powder. Fold in apples and nuts. Transfer mixture to prepared baking pan.

For topping, combine all ingredients and mix with a fork or pastry mixer until crumbly. Sprinkle over batter in pan.

Bake for 55-60 minutes, until toothpick inserted in bread, comes out clean. (Internal temperature of bread will be 200 degrees F when fully cooked.) Let cool. Remove from pan and drizzle top with vanilla glaze. Slice and serve. Store leftovers in an airtight container.

They also noted: In exactly one week Illinois will have the chance to witness the annular solar eclipse. Max eclipse will be at 11:54 am with around 55% of the sun being eclipsed by the moon. Under clear skies, this will be an awesome warm up for the April 2024 full eclipse. It's not too late to find solar glasses for viewing these eclipses either!

The last supermoon of the year came up in it's brilliant, bright orange fashion. Hoping to find an actual harvest in progress proved to be too much of a challenge so I managed to find some wildflowers obscuring fields of beans awaiting their turn to be harvested. *For best viewing, click to see the full image*

From its location in the Indian Ocean, Mahe, the largest island in the Seychelles chain, has an impressive amount of subaquatic scenery to offer a diver. Home to several marine parks, Mahe boasts the opportunity to dive with hawksbill turtles, bottlenose dolphins, Whale sharks, lobsters, and Moray eels. The Ste Anne Marine National Park, located 5 km from the capital Victoria, is one of the prime tourist locations in the Indian Ocean for scuba-diving.

Chicken and Broccoli Lasagna
Ingredients
9 lasagna noodles
4 boneless chicken breasts, cut into small cubes
12 oz. bag of frozen broccoli, thawed
8 oz. shredded mozzarella cheese
1 c. grated parmesan cheese
1 small onion chopped
2 cloves minced garlic
1/4 tsp. Plus 1 T. Salt
1 chicken broth
1 1/2 m full fat milk
1 tsp. dried basil
2 t. olive oil
5 T. Butter
5 t. Flour
Directions
Bring a large pot of water to a boil, add salt and noodles. Cook for 7-8 minutes until tender. Drain, drain cold water to prevent sticking, and set aside. On medium skillet, heat the oil and fry the chicken until fully cooked, add the broccoli, onion and garlic and cook until the onions are translucent. Removing from fire & set apart . In other saucepan, melt the butter & beat in flour. Cook for 1 minute, add chicken broth and milk and whisk until sauce begins to thicken. Cook until the sauce tightly coats the back of the spoon. Remove from heat and add basil, salt, Parmesan cheese and 1/4 C of mozzarella cheese.
Add the chicken mixture to the sauce and mix well. Assemble them… In a lightly greased 9″ x 13 pan”, place a layer of noodles, put a good layer of the sauce mixture on top and sprinkle with a quarter of the remaining cheese. Repeat for a second layer ending with a topping of noodles, then pour any remaining sauce on top and sprinkle with the remaining cheese. Bake at 375 degrees for 30 minutes or until golden brown and bubbling.
