This modern Filipino brunch Kamayan feast marries the rich culinary experience that is as much a feast for the eyes as it is for the palate.

Served individually on plates lined with banana leaves, each dish features steamed rice at the center, surrounded by traditional breakfast items such as Beef Tapa, Longanisa, Tocino, and Chicken Adobo.

🤌🔥 Here’s a cool update. Knife & Spork Public Relations, turns 10 years old today! Thank you to my clients who have been with me through these years and the ones that are still working with me today!

Thank you also to my wifey Nadia for helping with the business. It’s so much easier than when I was doing it on my own. And more fun!

Many businesses don’t make it 5 years. Ten years is pretty cool. Especially in the ever-evolving world of social media. To continue to provide value to people who matter a great deal to me is everything.

My only advice today would be if you have something in your mind that you want to put out into the world, do it. You never know where it will take you.

I have worked with some of the best restaurants and chefs in Orange County; helped them to get awards, articles and customers; weathered a pandemic that almost destroyed restaurant work; been an advocate for my industry; worked with my friends and to raise $250K+ for fire relief victims; and have had my work written about; and had my own content published in the Los Angeles Times, New York Times, Bon Appetit, Michellin, and more.

I often don’t talk about what I’ve accomplished doing this, but today I feel proud to celebrate this win.

🇵🇭❤️ BEFORE WE REVEAL WHERE WE’RE GOING FOR LOLA’S No. 2 LOCATION, I want to tell you about where we come from.

Lola’s rose from the (actual) ashes of our last restaurant MFK by AYSEE. That restaurant burned down right before the pandemic. We didn’t know if we would stay in the restaurant industry after that.

AYSEE—our namesake—is in Pasig, Manila. It’s an idea and a dream. It’s 30 years of hard work that my aunt and my grandmother put into what they believed in. Last year we visited, and that pushed us toward Lola’s No. 2.

Filipinos are the epitome of hospitality worldwide—in hotels, cruises, restaurants, etc. There’s a reason for that. We’re generally giving and happy, so it makes sense to be in an industry where we help people.

It gives me a deep sense of pride to continue my family’s legacy that started at AYSEE. From a little province in the middle of 7,000 islands came this idea that spread across the ocean. It’s taken a life of its own and is taking care of families and communities over decades with food and hospitality. I’m really proud to continue being of service and making my family proud by doing what they love and I love—to cook.

I was inspired on my trip by a lot of the innovative dishes happening in the Philippines right now. Before, I wanted to bring back really authentic, cultural ideas, but there’s so many new flavors and ideas to present.

I want to create brand new dishes that are still authentically Filipino but that people haven’t seen before. For me to put my own touch on the Filipino and Filipino-American experience. I’m really excited to bring that to this new Lola’s by MFK.

THANK YOU to everyone who has been down since day one, and to everyone who has joined the squad since then. We do this for you, our team, the love of our family, and our culture.

Here’s to everything that comes next. 🥂
