I missed last week...I just couldn't get it together last weekend. February is a struggle bus for me, but I am thankful it's been sunny and warm this week. That has helped!! So this week has a little bit of every cuisine. I try to keep some basics in each week and spice it up some nights. February is one of the shortest months but can often be one of the toughest, let's take dinner off our plate by planning ahead!! This week we start Monday with crockpot Mediterranean white chicken chili, followed by a comforting sheet pan kielbasa and perogies, Wednesday is an easy throw together salmon patty night, Thursday a vegan Potatoe and kale bowl with lots of flavor and wind (wine) down on Friday with a paleo pizza casserole....

Working on the last few documents to submit for my SC real estate license this morning, registering for my NC continuing education and reflecting on a fun weekend! Furman games are fun to watch if you're looking for an affordable family night out. There's also good cell reception if you need to watch the Clemson game at the same time……😜

Often times small tasks get in the way of your success; like those rocks that Watson quickly grew to hate (and caused us to turn around because he laid down and refused to move). Those small rocks kept us from reaching the top, we had a partial view, but we wanted the full view……
