Lime is the fruit of a shrub plant of the same name, actively cultivated in most countries of Southeast Asia and South America, as well as in Africa and Southern Europe. They are characterized by small size (up to 5 cm in diameter) and ovoid shape. In turn, the peel is notable for its small thickness and variety of colors - depending on the variety, it can be painted in various shades of green and yellow, as well as their combinations. For culinary purposes, juicy pulp with an intense sour taste is used.

Due to the active cultivation of lime around the world, a large number of varieties of these fruits are known. The most widespread of these are the Filipino and Mexican varieties - Everglade, Kagzi, Palmetto and Yung.

When fresh, these fruits are consumed in conjunction with other foods, which improves their palatability. In addition, lime is popular in the preparation of a wide variety of drinks, ranging from soft drinks to alcohol-containing ones. In the latter case, lime is an indispensable ingredient in such well-known cocktails as gin and tonic, mojito and margarita.
Also, it should be noted the widespread use of lime pulp and zest in the preparation of a wide variety of confectionery and bakery products. In many countries, lime cakes and pies are very popular. In the national cuisines of South and Latin America, lime is one of the most important ingredients in various sauces for meat and fish dishes.

Limes can be stored at room temperature for up to one week. You can increase the shelf life up to 3 weeks by placing the fruits in a cool, well-ventilated area or in the refrigerator.

Lime should not be consumed during exacerbation of chronic diseases of the gastrointestinal tract associated with increased acidity of gastric juice (ulcers, gastritis, pancreatitis).
