We are lucky enough to have an amazing underwater photographer in Jersey, Grace Bailey , who has taken these beautiful pictures of scallops in maerl habitats around Jersey. Maerl is a very important habitat for many marine species, including scallops, and therefore supports our Jersey hand-dived scallopers.

✨The anatomy of a scallop ✨

Here is what you find when you shell a scallop 🌊🍽

- The adductor muscle is the part we eat, but in the summer months the roe is often served alongside.
- The adductor muscle is also what the animal uses to swim, by allowing it to open and close its shell in a snappy motion.
- You can spot the freshness of a scallop if the meat feels firm, is a creamy white colour and smells a little bit like the sea.

Bonne Nuit Harbour 🛥 a quiet spot on Jersey's north coast where some of the island's scallop divers launch (Bob Titterington Permit 2, Toby Wooley Permit 4, Harry Jones Permit 5). While divers head out from various points around the island, small harbours like this keep the flow of local, sustainable seafood moving.

A bag like this can hold up to 300 hand-dived scallops, all picked one by one from the seabed by local divers. This low-impact harvesting takes more time, but it means fresher scallops, better quality, and a healthier marine environment.

Sustainability involves listening to the sea. Hand-dived scallops aren't harvested in bulk - divers work within strict limits, only collecting mature scallops and leaving younger ones behind. This way, the population stays healthy, the habitat remains intact, and the ocean continues to provide. It's not just about what we catch, it's about what we leave behind.
