So here are three quick and easy pumpkin recipes:
1. Pumpkin Soup
Ingredients:
• 2 cups pumpkin puree
• 1 onion, chopped
• 2 garlic cloves, minced
• 3 cups vegetable broth
• 1/2 cup coconut milk
• Salt and pepper to taste
• Olive oil
Instructions:
1. Sauté onion and garlic in olive oil until soft.
2. Add pumpkin puree and vegetable broth. Bring to a boil, then reduce to simmer for 10 minutes.
3. Stir in coconut milk, salt, and pepper. Blend the soup for a smooth consistency.
4. Serve warm, optionally garnished with pumpkin seeds.
2. Roasted Pumpkin Slices
Ingredients:
• 1 small pumpkin
• 2 tbsp olive oil
• 1 tsp cinnamon
• 1 tsp paprika
• Salt and pepper to taste
Instructions:
1. Preheat oven to 400°F (200°C).
2. Slice pumpkin into wedges, remove seeds, and place on a baking tray.
3. Drizzle with olive oil, sprinkle cinnamon, paprika, salt, and pepper.
4. Roast for 25-30 minutes, until tender and caramelized.
3. Pumpkin Pancakes
Ingredients:
• 1 cup pumpkin puree
• 1 1/2 cups flour
• 1 tsp baking powder
• 1 tsp cinnamon
• 1/2 tsp nutmeg
• 1 egg
• 1 cup milk
• 2 tbsp sugar
• 2 tbsp melted butter
Instructions:
1. In a bowl, mix flour, baking powder, cinnamon, and nutmeg.
2. In another bowl, whisk pumpkin puree, egg, milk, sugar, and melted butter.
3. Combine the wet and dry ingredients until smooth.
4. Cook pancakes on a greased skillet over medium heat, about 2-3 minutes per side. Serve with maple syrup.
