Recipe of the Week with Chef Massimo Capra: Fusilli with Cherry Tomato Confit, Burrata & Fresh Mint (A fresh, fragrant, summery pasta dish – serves 4)

This week we’re bringing you a beautiful seasonal recipe that tastes just like June: slow‑roasted cherry tomatoes, sweet and caramelized, paired with creamy burrata and the brightness of fresh mint.
An elegant yet incredibly simple pasta — perfect for a light lunch or a warm summer evening outdoors.

Ingredients (Serves 4):
• 380 g fusilli
• 500 g cherry tomatoes
• 1 large burrata (250 g)
• 2 garlic cloves
• Extra virgin olive oil
• Salt & pepper
• 1 teaspoon sugar
• Fresh mint leaves
• Fresh basil (optional)

Preparation:

1️⃣ Prepare the cherry tomato confit
Cut the cherry tomatoes in half and place them on a baking tray.
Season with olive oil, salt, pepper, a teaspoon of sugar, and two crushed garlic cloves.
Bake at 150°C (300°F) for 35–40 minutes until soft, glossy, and lightly caramelized.
This slow cooking brings out their natural sweetness.

2️⃣ Cook the pasta
Bring a pot of salted water to a boil and cook the fusilli until al dente.
Reserve a small cup of cooking water.

3️⃣ Combine everything
Place the fusilli in a large bowl and add the cherry tomato confit with all their juices.
Toss gently, adding a drizzle of olive oil and a splash of cooking water if needed.

4️⃣ The final touch
Tear the burrata by hand and place it on top of the pasta.
Add fresh mint leaves, which give the dish a bright, summery aroma.
A few basil leaves can be added as well.

To Serve:
Serve immediately with a drizzle of extra virgin olive oil and a crack of black pepper.
A fresh, creamy, fragrant dish that tastes like sunshine, summer… and Italy.
