A $700 espresso machine with a feature I had only seen done this way on a $2,500 Espresso Machine? I honestly wasn’t expecting that.

The Gemilai Ele has a full metal body, a proper brew boiler placed close to the 58 mm group head for better temperature stability, a separate thermoblock for steaming, and a temperature probe inside the steam wand that stops automatically when your milk reaches the temperature you set.

But the feature that impressed me most is the adjustable brew pressure. You can set the pressure yourself and even change it during the shot for pressure profiling, which is usually found on machines costing much more.

It’s not perfect, and there are a couple of things I would change, but for around $700, this machine offers a lot.

Somehow, cortado became one of the most confusing simple drinks on the menu.

The recipe is easy: equal parts espresso and steamed milk in a small 4 oz cup. But the confusion starts when people try to convert ounces to grams, because espresso and steamed milk don’t weigh the same as their volume, especially once foam is involved.

So yes, it’s a 4 oz drink, but the total weight is usually closer to 80 g.

Simple, balanced, rich, and one of the best small milk drinks you can make at home.

Better than Cold Brew. Why wait 16 hours for cold brew when you can make this instead?

This is Japanese Iced Coffee, also called flash brew, but with a twist. Instead of brewing over regular ice, I brew over coffee ice cubes. That means zero dilution, full strength, and a brighter, cleaner cup.

You can drink it straight over fresh ice, or take it to another level with salted maple cold foam.

Flash Brew Recipe:

* 18g coarsely ground coffee
* 90ml / 3 oz coffee ice cubes
* 180ml / 6 oz hot water

Salted Maple Cold Foam:

* 2 tbsp whipping cream
* 1 tbsp milk
* 1 tbsp maple syrup
* Pinch of salt

Method:
Brew the hot water directly over the coffee ice cubes. Once brewed, pour it over fresh ice. Drink it as is, or top it with salted maple cold foam for a sweeter, creamier finish.

Bright, clean, full-strength, and ready before cold brew even gets started.

This Persian Saffron Iced Coffee is my grandmother’s kitchen in a glass. Saffron, rose water, and a piece of Nabaat. If you know, you know.

How to make it:

- Grind 2–3 strands of saffron and place over ice
- Let it sit 30 minutes, the ice brews it slowly and pulls out the color and flavor
- Pour into a glass of ice
- Add 1 tsp rose water
- Top with cold water and your coffee
- Sweeten with sugar or a piece of Nabaat

The result? Floral, rich, refreshing, and packed with antioxidants and a natural mood boost.

Tokyo Iced Latte, a smaller, creamier iced latte with a naturally sweet, silky texture and no added sugar.

Recipe: Tokyo Iced Latte

Ingredients:

* 1 big ice cube
* 3 oz milk, about 90g
* 1 oz half-and-half, about 30g
* 1 ristretto shot, 18g in, 24-25g out

Method:
Add one big ice cube to your glass. Pour in the milk and half-and-half. Pull a ristretto and let it cool for a moment. Slowly pour it over a spoon so the coffee sits on top of the creamy milk. Mix, sip, and enjoy.
