Most people will never see what I do for a living as much more than a job, much less a chosen career. They will never understand what it feels like to walk through that back door of the restaurant and be immediately greeted by the sounds of the kitchen. Plates banging as they are being stacked in dish, the boil of the grease in the fryers performing a symphony of flavor, the pops and crackles of grease on the flat top, the subtle beeps of alarms on saute letting us know some culinary delight is ready to be removed from the oven. Sure, some nights its balls to wall, rails of tickets for hours, running to the walk-in for everything, tensions get high but that's where it happens. That's were bonds are made, friendships and brotherhood develop. You become a unit, a family. I wouldn't trade what I do for a living for anything in the world. Some call it a job, some call it a career, I call it my way of life. #
