Highlights range from pike-perch fishcake, beef tartare and marinated salmon to a delicate sweet corn soup and refreshing fennel & apple salad. Among the signature mains, guests can discover sturgeon with confit leek, fregola sarda and orange-tarragon notes, elegant filet mignon with potato pavé and green pepper sauce, or a beautifully balanced vegetarian dish of purple carrot, cherry gel, maple syrup and mint yoghurt.
The summer selection continues with comforting yet sophisticated plates such as slow-braised lamb shoulder, farmer’s chicken breast with yuzu carrot purée, and a classic veal schnitzel reimagined with brown butter mashed potatoes and apple veal jus.
