Cherry Bundt Cake

A perfect summer cake especially during the cherry season – when the first sweet cherries
are sweet and ready to be plucked from the trees. YUM! Our cherry bundt cake is a basic
dough recipe garnered with fresh pitted cherries. Get your forks ready!

Ingredtients

180g butter, softened
225g caster sugar
2 tbsp baking powder
250g plain flour
3 large eggs
2 tbsp milk
250g cherries, pitted
1 1/2 l bundt cake tin

Heat the oven to 180C/160C fan/gas 4. Thoroughly brush a 1.5 litre bundt tin with melted butter. Cream the butter and sugar together until light and fluffy. Mix together the baking powder and flour. Beat in one egg at a time, adding a spoonful of the flour mixture in between. Repeat until all three eggs have been added, then fold in the remaining flour mixture and stir in the milk. Spoon in half of the mixture, then add the cherries. Add the rest of the batter. Bake for around 40 minutes. The cake will take 40 - 50 mins, depending on the proportions of your bundt tin. If a skewer comes out clean, the cake is ready! Let the cake cool in the tin for 10 minutes before turning out onto a cooling rack. Once cooled, dust the cake with a little icing sugar.

Oven baked Dorade

Heat oven to 200°C. Trim the fennel tops, then cut into wedges. Peel the carrots and press the garlic. Toss on a baking tray and season with olive oil, salt and pepper. Wash the dorade and remove the scales, season both sides well and fill with lemon slices. Arrange on the baking tray and bake for 35 minutes. Enjoy!

I Starter

Savoy Cabbage Chips
2 tbsp Olive Oil
1/2 tbsp sea salt
1/2 tbsp paprika spice 1/2 tbsp chili

Preparation

Heat oven to 120°C. Tear cabbage leaves into large pieces, leaving out the thickest part of the ribs. Toss with spices and oil and arrange, in a single layer, on wire racks. Bake until golden and crispy, 30 to 40 minutes. Leave to cool. Serve them fresh or enjoy them with dips and pesto!
