KOREAN BULGOGI BOWL (VEGAN) 🌱

Do you know bulgogi? 🇰🇷 It’s a sweet and marinated meat used for Korean barbecue. For a vegan alternativ I used soy meat which soakes up the sauce perfectly. This vegan recipe is super easy to make, try it out!

You can find the recipe on as well which will be easier to follow along. 🌟

INGREDIENTS (2P)
• 1 Cup Rice
• 1 Carrot
• 3 Leafs Salad
• 1 Small Cucumber
• Some Kimchi

MARINADE
• 100g Soy Medaillons
• 1 Onion
• 2 Garlic Cloves
• 2 Spring Onions
• 4 Tbsp Soy Sauce
• 1 Tbsp Maple Syrup 
• 1 Tbsp Rice Vinegar
• 1 Tbsp Sesame Oil
• 1 Tsp Sesame Seeds
• 4 Tbsp Water
• 0.5 Tsp Chili Powder
• Pinch Pepper

INSTRUCTIONS
1. Prepare the soy medallions and rice according to the instructions on the package.
2. Chop the garlic, slice the onions and spring onions. Mix them with the rest of the ingredients to make a marinade and add to the prepared medallions.
3. Cut the carrots and cucumbers into sticks and the lettuce into bite-sized pieces.
4. Stir-fry the medallions with the marinade quickly on high heat. If it gets too dry, add more water and/or soy sauce. Serve the medallions with rice, the vegetables and kimchi.

ONE POT LASAGNA (VEGAN) 🌱

Your oven is broken or you just don't have one? This recipe is great if you want to eat lasagna, don't want to wash too many dishes and of course don't have an oven. 😅 Btw, the taste is also bf approved. I'm so surprised how good it tastes, so give it a try!

I'll be uploading a reel for it soon so it's easier to follow the instructions.

INGREDIENTS (2P)
• 3-4 Lasagna Sheets
• 200g Grated Cheese
• 2 Garlic Cloves
• 1 Onion
• 1 Carrot
• 1 Bell Pepper
• 1 Small Zucchini
• 100g Vegan Minced Meat
• 50g Red Lentils (optional)

SAUCE
• 1 Can Tomato Sauce
• 0.5 Tsp Chilli Powder
• 1 Tsp Vegetable Powder
• 2 Tbsp Herbs (Oregano, Basil etc.)
• Water (optional)
• Salt, Pepper

INSTRUCTIONS
1. Cut the onion, garlic, carrot, bell bell pepper and zucchini into small pieces or slices and fry them briefly in a pan.
2. Now add all the spices, the meat and the tomato sauce to the vegetable pan and season the sauce well. Let it simmer for about 3 minutes.
3. Now add water until all the vegetables are covered and put in all the lasagna sheets, making sure that all parts of the lasagna are covered with the sauce and let it simmer for 15 min until the sheets are soft. Add water if the sauce evaporates too quickly and the lasagna sheets aren't covered. This also prevents burnt food.
4. Sprinkle with cheese and let it simmer for a few more minutes until the cheese is completely melted.

[AD 🇬🇧/🇩🇪] VEGAN CHOC BEAR PAWS 🌱

Do you like cookies? Chocolately, crunchy and every bite makes you happy? Then these cute bear paws are perfect for you, they are covered in chocolate and super easy to make. In german they are called 'Bärentatzen' because they look like little bear paws. Cute, isn't it? 🐻❤

INGREDIENTS (50 Pieces)
• 300g Flour
• 1 Pkg. Vanilla Sugar (7g)
• 200 g Margarine
• 100g Sugar
• 30g Cocoa
• 3 Tsp 'Schade Schokolade' Mix
• 0.5 Tsp Baking Soda
• Pinch Salt

TOPPING
• 150 g Melted Dark Chocolate
• Amaranth or other sprinkles

INSTRUCTIONS
1. Knead together all dry ingredients and margarine. Let the dough sit in the refrigerator for at least 1 hour.
2. For the bear paws, use a teaspoon to scoop off some dough, roll into a ball and flatten slightly with your hands. Use a fork to imitate bear nails.
3. Now bake them for 10 -15 minutes at 180°C.
4. Let the paws cool completely, dip them in melted chocolate and decorate them.

[🇩🇪] VEGANE BÄRENTATZEN 🌱

ZUTATEN (50 Stück)
- 300g Mehl
- 1 Pkg. Vanillezucker (7g)
- 200 g Margarine
- 100 g Zucker
- 30 g Kakao
- 3 TL 'Schade Schokolade' Mix
- 0,5 TL Backpulver
- Prise Salz

TOPPING
- 150 g geschmolzene Zartbitterschokolade
- Amaranth oder andere Streusel

ZUBEREITUNG
1. Alle trockenen Zutaten und die Margarine zusammenkneten. Den Teig für mindst. 1 Stunde im Kühlschrank ruhen lassen.
2. Mit einem Teelöffel etwas Teig nehmen, zu einer Kugel rollen und mit den Händen leicht platt drücken.
3. Nun 10 -15 Minuten bei 180°C backen.
4. Lass die Tatzen vollständig abkühlen, tauche sie in geschmolzene Schokolade und verziere sie.

STICKY KOREAN CAULIFLOWER BITES (VEGAN) 🌱

Gochujang is an amazing spicy paste! ❤ I don't use it often but if I make vegan korean food, I enjoy it so much. Reminds me of my time in South Korea two years ago! 🇰🇷 How about you, do you have a favourite korean dish?

INGREDIENTS (1-2P)
• 0.5 Cauliflower (200g)

BATTER
• 150ml Plant Milk
• 100g Flour

CRUST
• 130g Breadcrumbs

GLAZE
• 1 Garlic Clove
• 1 Tsp Gochujang
• 2 Tbsp Soy Sauce
• 1 Tsp Sesame Oil

TOPPING
• Handful Sliced Scallion
• Sesame Seeds

INSTRUCTIONS
1. Wash and break the cauliflower in florets. Cook them until soft and drain the water.
2. Meanwhile mix all the ingredient for the batter and the glaze in two separate bowls together. Coat the florets in the batter first, then in the breadcrumbs amd afterwards with the glaze.
3. Bake the bites at 180°C for around 15 mins until crunchy.
4. Eat with sliced scallions, sesame seeds and rice.

FAKE MOCHI (VEGAN) 🌱

That was an huge accident but ended delicious! Tried to make a topping for a cake but made Mochi instead. If you're craving for easy vegan sweets, this one is for you! 😍

INGREDIENTS (4P)
• 6 Tbsp Flour
• 3 Tbsp Sugar
• 200ml Water

FILLING
• 2 Tbsp Flour
• 2 Tbsp Syrup
• 1 Tsb Cocoa

INSTRUCTIONS
1. Heat up a pan and roast the flour and sugar together for 1 min and gradually add the water. Mix everything together until it sticks well amd no clumps remain.
2. In a bowl combine the flour, syrup and cocoa. Make 4 balls out of it.
3. Now kned the dough from step one and divide it in 4 balls as well. Flatten it and put the choco ball inside. Wrap the dough around and enjoy!

COZY BERRY BOWL 🌱

The best part of this bowl was the homemade grape juice that my boyfriend's mom made. I used it for the chia pudding and it was so yummy! 😋 Additionally, I heated up the chia pudding which felt very good and warming. The combination of the 'cold' porridge with the warm chia pudding makes the breakfast really comforting. 😌

INGREDIENTS (1P)
• 100g Oats
• 200ml or more Plant Milk
• 0.5 Tsp Cinnamon
• Handful Blueberries

CHIA PUDDING
• 70ml Grape Juice
• 1 Tbsp Chia Seeds

TOPPING
• Coconut - Almond Spread
• Cranberry Granola
• Puffed Amaranth 
• Blueberries

INSTRUCTIONS
1. Combine the chia seeds and juice and leave it for 30mins in your refrigerator or prepare it the day before. After it gets thicker, heat it up in a pot or microwave.
2. Blend the oats, plant milk, cinnamon and blueberries in a mixer and transfer to your bowl.
3. Top it with the chia pudding and your favorite nuts, spread etc.

KOREAN VEGETABLE PANCAKE (VEGAN) 🌱

Yachaejoen or 야채전, that is the name of this crispy and yummy dish. During my semester abroad in South Korea I loved to eat this pancake. 😍 If you have a busy day, it is your food to-go because it is done in less than 20 mins! I totally recommend you trying it, especially if you visit Korea some day 🇰🇷

INGREDIENTS (2 Pancakes)

BATTER
• 300g Flour
• 300ml Water
• Salt

FILLING
• 0.5 Zucchini
• 0.5 Bell Pepper
• 1 Carrot
• 4 Small Mushrooms
• 1 Spring Onion

SAUCE
• 5 Tbsp Soy Sauce
• 1 Tbsp Rice Vinegar
• 3 Tbsp Water
• 1 Tsp Sesame oil
• Sesame seeds
• Sliced Spring onions

INSTRUCTIONS
1. Cut all the vegetables for the filling in thin strips and slice the mushrooms. In a bowl mix the veggies and the ingredients for the bowl together. I mixed it with a spoon.
2. Now heat up enough oil, add the mixture and flatten it. Fry it for 3-5 min on each aide until you have a very crispy side with brown spots.
3. Meanwhile prepare the sauce and dip the pancake in this sauce.

BAKED OATS WITHOUT BANANA (VEGAN) 🌱

What I really don't like is that many recipes include banana. 😅 So I thought I'll make a recipe without bananas and with ingredients which you normally have at home.  It's a great breakfast for your weekend or as well for mealprep. 🥰

INGREDIENTS (2P)

• 100g Oats
• 200ml Plant Milk
• 0.5 Tsp Baking Powder
• 1 Chopped Plum
• Handful Chocolate drops
• 1 Tsp Spirulina (optional)
• Sweetener of Choice (optional)

TOPPINGS
• Kaki
• Oats
• Chocolate drops

INSTRUCTIONS
1. Combine all the ingredients in a bowl and pour it in your form. Or for a "smooth" batter, first grind the oats into flour and then combine all the ingredients.
2. Bake at 180°C for 20 to 25 mins. Serve it warm or cold.

QUICK OATY SMOOTHIE BOWL (VEGAN) 🌱

This will be my favorite breakfast from now on! 😍 I was in a hurry that morning and just threw all the ingredients in a blender, pour it in a bowl and was ready to go! It is a perfect breakfast for office, study days and mealprep.👌 Save it for later!

INGREDIENTS (2P)
• 100g Oats
• 225 ml Plant Milk
• 0.5 - 1 Banana
• 1 Tsp Chia Seeds
• 1 Tsp Rose Hip Powder (optional)

TOPPING
• Puffed Amaranth
• choco-strawberry
• Chocolate pieces
• Chocolate Granola
• Banana Slices

INSTRUCTIONS
1. Blend all the mentioned ingredients, except the toppings into the blender. Add more plant milk if the consistency is too thick.
2. Pour in a bowl and garnish with your favorite toppings!

P.S. produces healthy freeze-dried snacks in different flavors. These contain many nutrients and natural ingredients. Since the pieces lose a lot of water due to freeze-drying, I prefer to eat them in a cereal or with yogurt.

Coconut Rainbow Jelly Dessert (Vegan) 🌱

One thing you may recognize in the vietnamese kitchen is jelly desserts. I didn't have all the ingredients for it the last time, so I created my own version and it is so easy to make. This cold dessert is reall, colorful, so it should be fine for the colder and gray days as well. 🌈 🥰

P.S. The instruction looks harder than it really is, so don't worry about it and you can prepare a bunch of it to eat it the next day!

INGREDIENTS (10P)

PUDDING LAYER
• 3 Tbsp Agar Agar
• 2 L Cold Water
• 2 Tbsp Sugar
• Different Food Coloring

MUNG BEAN LAYER
• 120g Mung Beans
• 240 ml Water
• 2 Tbsp Sugar

LIQUID LAYER
• Coconut Milk
• Syrup (optional)
• Crushed Ice (optional)

INSTRUCTIONS
1. Soak the mung beans overnight and rinse them the next day. If you have a pressure cooker, skip this step.
2. Stir the Agar Agar in 2L cold water until it has dissolved. Add 2 Tbsp sugar as well. Now heat the liquid and stir frequently until the bubbles come. If a white layer forms, you should scrap it off. Turn off the heat and divide the transparent liquid in several bowls depending on how many different colors you like. Add food coloring to each bowl and let it cool in your refrigerator until you get a firm pudding.
3. Meanwhile cook the mung beans with 240 ml water until soft or for 15 mins and mash them with a fork while they are warm. Add 2 Tbsp sugar, if you want and set aside.
4. If the pudding is firm, cut it in thin strips or any form you like.
5. To serve the dessert, layer the mung beans first, then add the colored pudding with crushed ice in between and fill it up with coconut milk. The colder, the better it tastes. 6. Drizzle more syrup on top if it is not sweet enough yet.

GERMANS NATURE AND PARKS 🌲🇩🇪

For one week I visited my friend whom I met during my semester abroad in South Korea. Luckily, she lives in Germany and we can meet at least twice a year. I'm so glad that our paths have crossed. 🥰

Places we visited:
- Hainich National Park
- Ziemestal Bridge
- Herkules Park in Kassel

Food we cooked (all vegan of course):
- Lentil balls in curry sauce with rice ()
- Vegan Japchae
- Creamy potato broccoli soup with bread
- Oven vegetables (see my recipe 'Mediterranean Potato Fans').

For our camping trip, we ate our leftovers and bought instant noodles.

It was a great stay, relaxing, quiet and it felt like a vacation. Listening to the sounds in nature was amazing and felt like a break from the hustle and bustle of everyday life. 🏕

Don't stress yourself, enjoy life and eat vegan! ❤
