The beef was was rich in iron and blood and had a primordial chewy texture with slight carbonisation. There was a welcome and enduring heat from the chilli mango sauce, though it was a little too easy on that fructose tang. The bun was just the right ratio of doughy and flavoursome to crumbly and light. But the Monterey Jack was like your spare car key: you know it’s around somewhere but it’s totally fu***ng lost. All in all, a superb visit to the burger casino table by .
