We are extremely grateful for the opportunity to share our products with the food and beverage industry experts at the Excellent Taste Awards.

It is truly an honor, and we feel very proud that our hard work has been recognized.

We are a family business rooted in the dairy tradition, with decades of experience passed down through generations. Our fatherโ€”the founder of our businessโ€”spent more than 25 years working as a cheesemaker for other companies before deciding, in 2015, to follow his own path and create a small cheesefarm dedicated to quality and authenticity.

In 2021, our journey was tested when a catastrophic flood completely destroyed our original cheesefarm. Rather than giving up, this challenge became our motivation. We rebuilt with a new vision: a larger, modern factory equipped with high-quality machinery that allows us to maintain the same artisanal quality in a safer, more comfortable, and more controlled environment. Today, the entire family is actively involved, with the younger generation continuing the effort to grow and evolve the business while respecting its roots.

Our latest products reflect both creativity and respect for tradition, including Gruyรจre with organic truffle mushroom and saganaki with roasted tomato and basil. While product innovation is important to us, much of our progress happens behind the scenesโ€”through improved procedures that safeguard quality at every stage.

What truly defines us is our commitment to clean, organic products. We source milk exclusively from local producers, as well as herbs and ingredients from trusted local partners. Even as we scale up our operations and expand our product range, we refuse to compromise on quality or resort to cheaper raw materials.

Technology plays a vital role in supporting this philosophy. Advanced pasteurization systems and vacuum sealing technology ensure food safety and consistency, allowing our cheeses to reach consumers exactly as they were intended.

Sustainability is another core value. We strive to operate as a zero-waste companyโ€”nothing is discarded. Matured cheeses, leftover herbs, and spices are all repurposed and sold for alternative uses. Our current focus is on reducing plastic packaging, which remains the only waste we still produce.

While climate change has not significantly affected our production, waste management remains a major challenge within our industry. Managing non-recyclable and environmentally hazardous waste is difficult, and unfortunately, there is limited governmental support in Greece to address this issue effectively.

Despite these challenges, we continue forward with resilience, responsibility, and prideโ€”driven by our family, our land, and our commitment to producing cheese of genuine quality.

I started beekeeping five years ago because I have always loved bees, and the work quickly became a passion. From the beginning, I wanted to create honey that could be considered among the best in the world, and I am proud to say I have achieved that. My oak honey is produced in small amounts because I focus on making a rare, high-quality honey. Scientific studies show it is the top honey in the world for antioxidants.

My beehives are in the Rhodope mountains, far away from any crops. I use only organic methods because my honey is first enjoyed by my children and then by my customers. For me, the most important thing is making sure the honey is the best quality possible.
