Gabriel Waterhouse and will open Waterhouse, a new restaurant, wine bar and garden on Ezra Street just off Columbia Road Flower Market from 6th August.
Following the closure of The Water House Project last month, Waterhouse is a culmination of years spent refining their vision and approach to hospitality. The restaurant is rooted in Gabrielโs upbringing in Northumberland, with a focus on the produce, landscapes and traditions of North East England.
Housed within a restored Victorian warehouse, the 24-cover restaurant explores a contemporary interpretation of the North East through ingredients including Lindisfarne oysters, hand-dived scallops, smoked fish, Herdwick hogget and Northumbrian honey. A kitchen larder of vinegars, garums, kombuchas, misos and seasonal infusions sits at the heart of the cooking, while a newly planted garden will supply herbs, flowers and produce as it matures.
A handcrafted oval oak bar will open first to restaurant guests before welcoming walk-ins from September.
