No-Bake Tiramisu Truffles
Ingredients (Makes 15–18 truffles)
For the Base:
2 cups vanilla sponge cake crumbs (or ladyfingers crushed)
1 tbsp instant coffee
2 tbsp warm water
½ cup mascarpone cheese (room temperature)
3 tbsp powdered sugar
½ tsp vanilla extract
For Coating:
3–4 tbsp unsweetened cocoa powder
Optional: melted white chocolate for filling center

Step 1: Prepare Coffee Mixture
Dissolve instant coffee in warm water.
Let cool slightly.
Step 2: Make Filling
In a bowl, mix mascarpone, powdered sugar, and vanilla.
Add dissolved coffee.
Stir until smooth and creamy.
Step 3: Combine
Add sponge cake crumbs to the mascarpone mixture.
Mix until a soft dough forms.
If too sticky, chill for 20 minutes.
Step 4: Shape
Scoop 1 tablespoon mixture.
Roll into smooth balls.
Optional: Add a small white chocolate piece in the center.
Step 5: Coat
Roll each ball in cocoa powder until fully covered.
Place on tray and refrigerate for 30–60 minutes.

Store in airtight container in fridge for up to 4 days.
Serve slightly chilled.
