DID YOU KNOW: Oak trees used for cask-making take a very long time to mature—much longer than most commercial timber trees. 80 to 150 years is standard for oaks used whiskey barrels.
French oak (Quercus robur, Quercus petraea) is often harvested at 100–120 years.
American white oak (Quercus alba) is usually harvested at 70–100 years.
Barrels need tight-grain, knot-free wood, which only develops when the tree grows slowly.
Trees must be tall and wide enough (about 50–60 cm / 20–24 inches diameter) to produce long, straight staves. One tree can make just three new casks.
Sustainable oak forestry keeps a continuous cycle of carbon absorption by replacing harvested oak trees with new ones. This maintains a continuous cycle: for every oak harvested, many more are left to grow or replanted.
So when you sip a HYDE whiskey aged in oak, the barrel likely came from a tree planted by someone’s great-grandparents!
