As far as we're concerned, every day should be pancake day! Try 's Cashew Pumpkin Spice Pancakes:

Ingreds:
240g Flour
2 Tbsp Meridian Cashew Butter
200g Pumpkin puree (tinned)
300ml Almond Milk
1 Egg
2 Tbsp Maple Syrup
2 Tsp Baking Powder
2 Tsp Cinnamon
1/2 Tsp Ginger
1/2 Tsp Nutmeg

Method: Mix the wet and dry separately before combining. Cook on a medium heat!

(Serve with cinnamon, Cashew Butter and ice cream of choice).

2 Generous Tbsp Meridian Crunchy Peanut Butter
2 Eggs
2 Tsp Sweetener
1 Tbsp Baking Powder
1 Tbsp Maple Syrup
1 Tsp Vanilla Extract
200ml Almond Milk

Mix into a batter, fry and flip!
