Chipotle opened its first Asian store in Gangnam this week.
3-hour waits on opening day. Lines around the block.
But scroll through the comments under the launch videos, and alongside the excitement, you'll find a more skeptical thread:

"Great for now. But watch them raise prices, shrink portions, and fade out. Give it a year."

"Wait until the hype dies before you go."

Harsh? Maybe. But Korean consumers have seen this pattern before - global brands drawing huge opening crowds, then quietly declining once the novelty wears off.

They're not being cynical. They're being experienced.

And the category itself is a challenge. Mexican food has never fully taken off in Korea. Taco Bell went from 43 stores in 2019 down to 11 by 2021 - and has stayed there since. On the Border has been in Korea since 2007, and after nearly two decades operates around a dozen locations. There's no cultural baseline for daily Mexican dining the way there is in the U.S.

Meanwhile, Subway - another build-your-own concept - found its footing in Korea by adapting: local menu items, aggressive store expansion, pricing that fits the daily lunch budget.

Chipotle is taking the opposite bet: "no Korean patch." Same menu, same daily fresh prep, same standards as the U.S. All stores directly operated, no franchising. That's a quality-first signal - but it also means a chicken taco + guac lunch runs ₩16,000 in a market where daily lunch budgets are watched closely.

So the real question isn't whether the opening buzz lasts. It's what comes after - can a premium-priced, no-localization bet build a category that even localized players couldn't crack?

Korean consumers are watching. Not the opening lines - the year after.
