This super - cold - hardy vegetable crop, very tender edible flowering plant in the family of AMARANTHECEAE, also nicknamed in some locality as water - leaf, with is Binomial name as Spinacia Oleracea. Baby spinach is extremely versatile and can be enjoyed many ways. To reap the benefits of this super food, you should include it more in your diet.
Baby spinach is high in vitamin A, K, and folate, which is very important for woman of child bearing age, because it helps to prevent neural tube defects in developing babies.
