The rather pale yellow, slightly cloudy wine with a striking nose!

There are notes of butter-roasted apples and apricot with a slight resinous touch (pine needle). The palate is slender, tense without being stiff, coated in a rich, pulpy, fruity substance, of quite impressive density. There is no heaviness to this wine. It is better defined as , gluttony.
The finish goes up a notch in density: it’s powerful, chewy, without being tannic or astringent. The fruity and buttery notes in the nose are still alive on the palate with an intensity that does not weaken and has a fresh finish.
This white will pair perfectly with sophisticated and gourmet preparations. Its broadness and minerality will go well with truffled dishes. Its body also allows for combination with more spicy dishes such as a shoulder of lamb with spices.
Winemaking:
Skin maceration for 10 days at 14 degrees (scratched, crushed). The juice is then fermentation in terracotta and stoneware tuns and amphorae. The aging continues in the same containers without racking.
Bottling is done after 10 months without filtration or fining.
