Pineapple Jam, a jam that you'll enjoy to eat with a warm buttered toast or as a sandwich.

Ingredients:

1 pineapple
1 cup water
2 cups sugar
Juice of 2 limes

Procedure:

Peel the pineapple and grate the flesh -- you should end up with about 2 cups. Put the pineapple and water in a small saucepan and cook over medium-low heat until the pineapple is soft, about 35 minutes.

Add the sugar and lime juice and stir to combine. Cook until the mixture has thickened, about 45 to 60 minutes. Spoon the jam into a 16-ounce jar with a tight-fitting lid. Store it in the refrigerator for up to 3 months.

Caramel Delights

ingredients:
3/4 pound unsalted butter
1 cup sugar
1 teaspoon vanilla
3 1/2 cups flour
1/4 teaspoon salt
3 cups shredded coconut
12 oz chewy caramel candy
3 tablespoon heavy cream/milk
chocalate for melting

Procedure:
for dough
-preheat oven to 350 degrees. Cream butter and sugar in mixing bowl. add vanilla then add flour and salt. Chill dough for 30 minutes.
-Roll out 1/4 thick and cut circle out.
-Cut small circle in center of larger circle. Bake on ungreased cookie sheet for 20-25 minutes.
-Once the cookies are cool, dip bottoms in melted chocolate.
-In seperate bowl melt caramel candies candles with heavy cream.
-Mix in coconut. Spread on top of cookies. Drizzle with melted chocolate.

Ingredients:
1 tbsp. sugar
1/2 cup cold milk
2 scoops ice cream
1kiwi
5-10 black grapes
1 mango

Procedure:
-Place cold milk, ice cream and sugar in a blender and process on hight until smooth and creamy.
-In a tall glass, place black grapes and mango then pour the milk shake then decorate it with kiwi.

Compote fruit crepe with ice cream on top.

for compote
1/2 cup water
1/2 cup sugar
2 cups assorted fruits (mango, black grapes and kiwi)

for flour
1 cup flour
1 pinch salt
3 eggs, lightly beaten
1 1/4 cups milk
2 teaspoons melted butter, plus a small amount for the pan

Procdure:

for compote:

-Combine water and sugar in a medium-sized heavy saucepan over medium heat, stirring to dissolve sugar. Stir in half of the assorted fruits and bring to a boil, then reduce to a simmer, stirring occasionally, until assorted fruits begin to burst, 3 to 5 minutes. Remove from heat and add the remaining fruits. Serve warm or at room temperature.

for flour:

-Whisk flour, salt, eggs, milk and melted butter together in a large bowl to make crepe batter. (or combine in blender).
-Heat a skillet with low sides over medium heat until a drop of water skitters across the pan. Grease the pan with a little butter and ladle about 1/4 cup of batter into the pan, pouring into the center of the pan and swirling pan to spread batter evenly. Cook for 1-2 minutes, until edges just begin to show a pale golden color, then flip and cook for another 1-2 minutes. Transfer crepe to a plate and keep warm in a 200 degree oven. Repeat until you've used all the batter.

for plating:

-To assemble, spread the compote fruit onto warm crepe, roll, and spoon the ice cream and put it on top.
