Only blue fin tuna is used to produce true toro. In Japan, the quality of the meat that can be extracted from a blue fin tuna is measured, with the prized toro, the fish's fatty belly, receiving the highest marks. To avoid bruising or damaging the flesh, tuna for sushi is handled carefully.
