❤️Kaldereta is derived from the Spanish word “caldera”, meaning “cauldron or cooking pot”. The dish was brought to the Philippines by Spaniards during the colonization in the 1500s for more than 300 years.❤️

💖Kaldereta is a type of meat stew that is a staple in Filipino cuisine. Goat or Beef meat is often preferred.😘

💕 Primary ingredients for the Kaldereta are tomato sauce, liver spread, onion, garlic, bell pepper, soy sauce, green peas, potato, carrots, and the beef broth. 💕

💛 The meat is basically simmered until tender. And the vegetables such as carrots, potato, peas, olives, and bell peppers are added into the stew to make a flavorful and healthy dish. 💛

✅ SPICY PORK KALDERETA (Caldereta)
✅ ( Makes 4-6 servings)

✅ Ingredients :

2 lbs pork belly
2 pcs potato, cubed
2 pcs carrots (small), sliced
¾ cup green peas
¼ cup olives
1 pc red bell pepper
1 can liver spread
3-4 pcs chili pepper
1 pc red onion
1 head of garlic, minced
¼ cup shredded cheese (optional-but will make your sauce creamy)
1 can tomato sauce
2 cups beef broth ( you may use bouillon cubes as an alternative for the beef broth)
2 tablespoons soy sauce
1 teaspoon salt
¼ teaspoon ground pepper
3 tablespoons cooking oil

✅ Procedure:

(1) Heat oil in a pan
(2) Saute garlic and onion
(3) Add the meat, and fry until light brown
(4) Pour in tomato sauce. Stir a little
(5) Add the chili pepper, soy sauce, liver spread.
(6) Stir and continue to cook for 3-4 minutes
(7) Pour beef broth. Let it boil for 45 minutes
(it will only take around 25 minutes to tenderize the meat using a Pressure Cooker)

(8) Slow down the fire.
(9) Add carrots, potato, olives, and bell pepper.
(10) Season with salt and pepper
(11) You may add the cheese before serving. This is optional but will make your sauce creamier.
