Ingredients
1 kg tofu, cut into cubes
1 cup pineapple chunks (fresh or canned, with juice)
1 cup coconut milk or all-purpose cream
1 medium carrot, sliced thinly (Optional)
1 medium red bell pepper, sliced
1 medium green bell pepper, sliced
1 medium onion, chopped
3 cloves garlic, minced
2 tablespoons soy sauce
Salt and pepper to taste
Cooking oil for frying
Optional
1 tablespoon sugar (if you like it sweeter)
Instructions
1. Fry the tofu cubes until golden brown. Set aside.
2. In a pan, heat a small amount of oil and sauté the garlic and onion until fragrant.
3. Add the carrots and cook until slightly softened.
4. Add the red and green bell peppers, and stir-fry for a minute.
5. Pour in the pineapple chunks with juice and coconut milk (or cream). Add soy sauce and stir well.
6. Season with salt, pepper, and sugar if desired. Let the sauce simmer until slightly thickened.
7. Add the fried tofu, and mix well to coat.
8. Let simmer for another 2-3 minutes until flavors are combined.
