獻給調酒業的一封情書

這本書從上次World Class結束就醞釀到現在了
書名「大肆」也非常有故事
因為我出這本書的時候就可以講：出「大肆」了
跟大家找我拍攝的情境很像
馬上就要出大事了才找我們

很高興能夠擔任本次年度最佳新酒吧頒獎人

「我的工作，是讓酒吧看起來比它實際上的營業額還夢幻」
餐飲業真的不是一件容易的事情
相信站在這裡的都是因為專業是餐飲而做餐飲
它絕對沒有外表上這麼光鮮亮麗

也有很多人問我：
為什麼要有這麼多的頒獎典禮？
這麼多頒獎典禮到底有什麼意義？

首先我覺得最大的意義是：
讓Bartender們忘記客人總是點Highball
而不是花了6個月研發的紫蘇高湯foam

原因我放後面先來做結
就像當天的講稿
「我的工作，是讓酒吧看起來比它實際上的營業額還夢幻。」

I’m truly honored to present this year’s award for Best New Bar.

“My job is to make bars look more magical than their actual revenue.”
The F&B industry is no easy feat.
Everyone standing here today is in this because they’re passionate and professional — not because it’s glamorous on the surface.

People often ask me:
Why are there so many award ceremonies?
What’s the point of all these accolades?

Well, I believe the biggest reason is this:
To help bartenders forget that guests keep ordering Highballs
instead of the shiso consommé foam they spent six months developing.

I’ll get back to the real reason in a moment — but let me end this part with the same line from earlier:
“My job is to make bars look more magical than their actual revenue.”
Foodporn will continue to evolve with boundless creativity.
Let’s keep the magic and romance going strong!

1. 其實各個Award都有著不同的評審團體
大家選出來的結果才會有差異
目前評審團體可能圈子比較小讓大家有這個疑問
每個Award拿到的瞬間都是對酒吧以及個人的肯定
讚美越多越好對吧？
產業持續發展擴大圈子award也就會更有公信力

2. Paperplane協助台灣調酒圈建立與政府溝通的途徑
讓很多事情的發生有了可能
並特別設立亞洲影響力Bartender獎項🏆
用投票產生具有足夠影響力的人物
讓政府更認識這個產業發展

咖啡館空間以晶透的金色花瓣為主題
白、金色構成花瓣圖樣覆蓋牆面優雅又奢華

餐點元素使用了龍眼、花生、愛玉、馬告、剝皮辣椒……
各種台灣元素，
與主廚何順凱的料理風格一致
看得到台灣的風格又有法式的雅致

拍攝上也選用全白背景體現乾淨高雅的質感
活動現已結束獲得了大量好評

The café space is designed around the theme of translucent golden petals.
White and gold petal patterns elegantly and luxuriously cover the walls.

The menu incorporates ingredients such as longan, peanuts, aiyu jelly, maqaw, and pickled chili—
a variety of Taiwanese elements that align with Chef Kai’s culinary style,
blending Taiwanese character with French elegance.

For photography, an all-white background was chosen to emphasize a clean and refined aesthetic.
The event has now concluded and received widespread acclaim.

台灣人擁有的第一家蘇格蘭威士忌酒廠就是Spey威士忌酒廠

🥃聖誕將至跟大家分享spey威士忌的常規款「雪莉總裁」
📸以及怎麼用單燈把威士忌拍的非常高級

Spey近年非常注意年輕化的品牌形象
也與藝術掛鉤推出具有收藏價值的「畢加索」系列
這次還有AR實境的濾鏡讓人一秒來到酒廠
Spey 「雪莉總裁」用了雪莉桶與波本桶雙桶勾兌
聖誕感的雪莉果香以及尾韻黑巧克力甜蜜悠遠
是非常有聖誕感覺的威士忌

綜上所述
有了威士忌的背景會讓我更知道怎麼拍出威士忌酒液的發色
這次分享比較簡單的燈位以及布光
給一般人在打威士忌光線多一些概念
-
這次器材為 單一光源 + 柔光紙（甚至可以是烘焙紙）
1. 正面站側邊主光源過柔光紙給威士忌標與瓶身有方向性的面光
3. 第二張同樣的設備拿去威士忌的正背面，讓光線穿過威士忌的酒液帶出威士忌本身的顏色
4. 最後將上述兩張照片合成即可
（要是設備允許也可以雙燈一次完成，其實拍威士忌相對複雜情況也很多元，本次以器材最少但需要一點修圖能力去解釋）
4. 酒色的部分突出雪莉特有的紅色印象，將瓶身調整成由黃到紅迷人的漸層

威士忌拍攝其實非常的複雜
之後也可以做一系列專題跟大家分享不同的酒款或
是產品應該要怎麼拍攝

每次拍比賽調酒都會與Bartender討論他們的設計理念
這也是我自己很喜歡的一個部分
將兩種喜愛的東西靠自己的專業結合起來
並用照片的形式企圖讓看到的人立馬理解
多麼傲慢的一件事啊！

我在想照片是很直覺的
像是這次「黑化」為主題的提煉
也是在討論過程中就呼出
最自然的方式就是在一來一往的討論中
最終拍攝的畫面就已經在我腦中呈現出來

整棟空間藏在當地古老的市場內
濕漉漉的市場環境你甚至要跨過污水
但進來卻是一間有水準的餐廳
因為越南菜充滿了新鮮的香草
這也許確保了他們香草的品質

Anan means, “eat, eat”
Bar Nhau Nhau means, “drink, drink”

如果你熟悉越南煎餅、pho、烤肉米線、春捲等越南小吃
你很容易發現主廚將這些小吃延伸為更能讓外國人接受的概念
越南煎餅->taco
牛骨髓pho塗抹在 baguette讓Pho吃起來更有趣
個人比較推薦上述兩道
調酒感覺也是沒碰到主理人
但這裡的概念我非常喜歡！

The entire space is hidden in a local ancient market.
You have to cross through murky market surroundings, even stepping over sewage.
But once you enter, it's a restaurant of high standards.
Because Vietnamese cuisine is filled with fresh herbs,
which perhaps ensures the quality of their herbs.

Anan means "eat, eat."
Bar Nhau Nhau means "drink, drink."

If you're familiar with Vietnamese pancakes(Bánh Xèo
), pho, grilled meat vermicelli(Bun cha), spring rolls, and other Vietnamese snacks,
you'll easily notice that the chef has extended these snacks into concepts that are more appealing to foreigners.
Vietnamese pancakes become tacos,
and spreading beef bone marrow pho on baguettes makes Pho more interesting to eat.
Personally, I highly recommend the two dishes mentioned above.
I didn't meet their head bartender(Cocktail is not like what I see in ig), but I really love the concept here!
