Белый шоколад 34% Zephyr - 270 г (www.tortdeko.ru 500г-989₽)
Пюре клубники - 145 г (www.tortdeko.ru 250г-235₽)
Сливочное масло 82.5% - 35 г (www.tortdeko.ru 450г-425₽)

🍓Шоколад растопить
🍓Пюре клубники нагреть, вылить на белый шоколад
🍓Пробить ганаш блендером
🍓При температуре ганаша не выше 40 градусов добавить сливочное масло и ещё раз пробить блендером
🍓Отправить начинку в холодильник для стабилизации на 12 часов

Лимонный гель 🍋
Сок лимона - 115 г
Пектин цитрусовый - 6 г (www.tortdeko.ru 100г-320₽)
Сахар - 40 г
Лимонная кислота - щепотка

🍋Сахар смешать с пектином и ввести в сок лимона непрерывно помешивая
🍋Поставить сок на плиту и довести до кипения, добавить щепотку лимонной кислоты, перемешать и снять с плиты
🍋Перелить гель в кондитерский мешок и остудить

🔶Сборка
🔸Отсадить стабилизированный клубничный ганаш на крышечки макарон, в центр отсадить лимонный гель
🔸Отправить макарон в холодильник для пропитки на 24 часа
🔸Срок годности - 3 суток
