Potato salad with sorrel
INGREDIENTS
8 medium new potatoes
2 medium salted cucumbers
1 medium sweet onion
1 small bunch of sorrel
2-3 sprigs of parsley
2-3 sprigs of cilantro
2-3 sprigs of dill
1 tsp mustard
4 tbsp. l. unrefined sunflower oil
salt
freshly ground black pepper.
STEP-BY-STEP COOKING RECIPE
Step 1
Wash the potatoes thoroughly with a brush and boil in their skins in boiling salted water until tender, about 25 minutes.
Step 2
Drain the cooked potatoes, cool for 10 minutes, and cut into 4 pieces. Peel the onion and cut into rings. Place potatoes and onions in a bowl.
Step 3
Mix mustard with 2 tbsp. l. sunflower oil, salt and pepper. Season potatoes with onions and set aside.
Step 4
Cut the sorrel into strips (hard stems can be removed), chop the greens. Cucumbers cut into cubes.
Step 5
Add cucumbers and all greens to potatoes with onions, mix. Drizzle with remaining oil and serve.
