Orange Meringue Pie
Ingredients
1 (9 inch) unbaked pie crust
3/4 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
2 cups water
4 large egg yolks
1/2 cup fresh orange juice
1 tablespoon orange zest
2 tablespoons butter
4 large egg whites
1/4 teaspoon cream of tartar
Directions
1. Preheat your oven to 350°F (175°C).
2. In a saucepan, combine the sugar, cornstarch, and salt. Gradually whisk in the water until smooth.
3. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
4. In a small bowl, whisk the egg yolks. Temper them by whisking in a little of the hot mixture, then stir the tempered yolks back into the saucepan.
5. Cook for another minute, then remove from the heat. Stir in the orange juice, orange zest, and butter until everything is silky and combined.
6. Pour the warm filling into the prepared pie crust.
7. For the meringue, beat the egg whites with the cream of tartar until soft peaks form. Gradually add the sugar, continuing to beat until stiff, glossy peaks form.
8. Spread the meringue over the filling, making sure to seal it to the edges of the crust so it bakes up nicely.
9. Bake for 10–12 minutes, until the meringue is a lovely golden brown.
10. Allow the pie to cool before slicing and serving so the filling sets. Enjoy!
