Flavorful Caramelized Onions Recipe

Is there anything not made better by the addition of syrupy sweet slow-cooked caramelized onions? If there is, we haven't found it just yet. You can use this simple and delicious recipe to add to so very many different meals: to top your favorite roasted vegetable or meat, to mix into a nice stir-fry, to stir into a thick creamy soup, to top a batch of garlic bread, or you could even top a dip or spread with some before you serve it. The possibilities are endless! In this caramelized onions recipe, you can cook them for as long as you would like, depending on what you'll be using the final product for. We promise, they will only improve the longer you let them cook! But if you do plan to cook these down to an oniony jam (a consistency that is achieved after about 45 minutes of cooking), add an extra onion or two (you might as well, if you're taking the time to do this) and keep the flame really low. Don't have the time but still want the sweetness? Add a splash of balsamic vinegar in the final moments of cooking and you'll have yourself a whole new recipe!

MAKES 1 CUP
YOU'LL NEED
1 Tbsp olive oil
2 large red onions, sliced
1⁄2 tsp salt

HOW TO MAKE IT
Place all ingredients in a food processor and pulse until thoroughly blended.

This Shrimp Scampi With Linguine Pasta Recipe Is Garlicky Perfection

I am a huge fan of garlic—which I will happily blame my Italian grandmother for. My love for garlic runs deep. Give me any kind of meal with minced garlic in it, and I am the happiest woman in the world. So you can imagine my utter excitement when I made a shrimp scampi linguine pasta recipe that had so much garlic in it, it made me cry happy tears.

Now most shrimp scampi dishes are made with dry white wine. However, not all of us have a bottle of white open to cook with, so I have an easy shrimp scampi pasta without wine! You simply substitute the dry white wine for vegetable broth instead. It will give the shrimp scampi sauce a nice salty finish that pairs well with the shrimp.

What is the best pasta for shrimp scampi?
I find the most common go-to pasta used for shrimp scampi is linguine. However, that doesn't mean you have to always use linguine in your recipe—especially if you're looking for a gluten-free or low-carb alternative. You can try one of these healthy pasta brands, give it a try with this gluten-free linguine, or even this linguine made with spinach!
Do you need to have shrimp scampi over pasta?
Now, usually this dish is served with pasta, but if you don't want it, this recipe is delicious on its own! You could always make this shrimp scampi recipe with some roasted vegetables. 2 tablespoons olive oil

4 garlic cloves, minced
1 pound large shrimp, shelled and deveined

8 oz. linguine
1 lemon

HOW TO MAKE IT
Boil water and cook the linguine.

Add in the linguine. Cut the lemon in half and squeeze the juice into the pasta dish.

1 egg

Sunrise Sandwich With Turkey, Cheddar, and Guacamole Recipe

We are firm believers in the splendors of the original Egg McMuffin, along with many of the other ready-to-eat breakfast sandwiches that have followed in its wake. But not all handheld breakfast bites are so virtuous, because many of them are flooded with excessive carbs and fat. And even the McMuffin can be greatly improved upon, which is exactly what we do here, subbing in lean turkey for Canadian bacon, adding lycopene-rich tomato, and crowning it all with a spread of heart-healthy guacamole.

NUTRITION: 380 calories, 13 g fat (3.5 g saturated), 980 mg sodium
SERVES 1
YOU'LL NEED
1 tsp canola or olive oil
1 egg
Salt and black pepper to taste
2 oz smoked turkey breast (Smoked meat products can be high in sodium. Look for turkey with fewer than 500 milligrams of sodium per serving.)
1 slice American, Cheddar, or pepper Jack cheese
1 thick tomato slice
1 whole-wheat English muffin, split and toasted
1 Tbsp guacamole, either homemade or Wholly Guacamole

HOW TO MAKE IT
Heat the oil in a small nonstick skillet or sauté pan over medium heat until hot.
Add the egg and gently fry until the white is set but the yolk is still runny, about 5 minutes.
Season with salt and pepper to your liking.
Place the turkey on a plate, top with the cheese, and microwave for 30 to 45 seconds, until the turkey is hot and the cheese is melted.
