If kale has ever tasted like punishment, this is your redemption arc.
This Massaged Avocado Kale Salad is ridiculously simple and actually tastes good. Like, “wait... why am I craving kale?” good.
The trick is not just tossing everything in a bowl and hoping for the best like a raccoon with ambition.
You squish the avocado right into the kale with lemon juice and a splash of liquid aminos, and it turns into a creamy dressing while softening the kale at the same time. Add some super thin red onion, and if you want, toss in a little tomato or bell pepper.
Ingredients:
Kale
1 ripe avocado
Lemon juice
Red onion, sliced super thin
Liquid aminos
Optional: tomato or bell pepper
Quick how-to:
Add chopped kale to a bowl
Add avocado, lemon juice, and liquid aminos
Massage and squish it all together for 1 to 2 minutes
Add thin sliced red onion
Add tomato or bell pepper if you want
Taste and adjust
Fresh, tangy, creamy, and stupidly easy.
