| PRESSURE COOKER PORK RIBS ππ₯
INGREDIENTS:
*1 tablespoon brown sugar
*2 teaspoons kosher salt
*2 teaspoons onion powder
*2 teaspoons black pepper
*2 teaspoons ground mustard
*1 Β½ teaspoons smoked paprika
*1 teaspoon dried thyme
*1 teaspoon dried oregano
*1 teaspoon garlic powder
*1 teaspoon freshly ground black pepper
*ΒΎ teaspoon ground cumin
*Β½ teaspoon cayenne pepper
*2 pieces of pork ribs, about 2 pounds each, trimmed of excess fat, rinsed, and dried
*2 cups chicken stock
*Β½ cup apple cider vinegar
*2 cups barbecue sauce
DIRECTIONS:
1. In a small bowl, mix brown sugar, salt, onion powder, black pepper, ground mustard, paprika, thyme, oregano, garlic powder, freshly ground black pepper, cumin, and cayenne pepper.
2. Remove the membrane from the underside of the ribs, pulling it down the entire length. Season ribs with the brown sugar mixture, rubbing thoroughly on both sides.
3. Add chicken stock and apple cider vinegar to a 6-quart pressure cooker. Place the metal trivet inside the cooker.
4. Place the ribs on the trivet, rolling them in a circle.
5. Select the manual setting; adjust the pressure to high and set the time for 20-25 minutes. When cooking is finished, release the pressure quickly according to the manufacturer's instructions.
6. Preheat the oven to broil. Line a baking sheet with aluminum foil.
7. Place the ribs, bone side up, in a single layer on the prepared baking sheet; brush with barbecue sauce.
8. Place in the oven and broil until the barbecue sauce is caramelized and browned, about 4-6 minutes.
9.Serve immediately with the remaining barbecue sauce.
