The Omakase Sushi Dinner last night at The 803 proved to be an overwhelming success with a packed house, reservations peaked and those waiting to be seated. With the partnership from Pecko Zantilaveevan, the executive chef of the Four Seasons in NYC, the brainchild of two sophomores from Boston University, Jarrett Deutsch and Ethan Cole began while they began experimenting with their culinary sushi skills in their dorm room, offering it to their friends then soon, students, faculty and residents from surrounding neighborhoods and universities became regulars. With their hometown being New York, New York, the two come home for the summer and have presented their pop up restaurant to that of limited seating...always packing the house. Culinary critics and sushi connoisseurs from the city, New Jersey, Westchester and Connecticut seek out the Omakase Sushi events of The 803 Restaurant.
Last nights menu was created using their own eclectic sauces with a flavor of France, Italian, Japanese and Thai. The freshest sashimi, vegetables, fruits and flowers were abundant and prepared skillfully with ease. I watched as the chefs and their line chefs blanched, boiled, sauteed, seared, blended and whipped away each handmade nigiri sushi with care to perfection in taste and in true Japanese fashion...an artform in presentation. Each presentation had Japanese maple leaves or the leaves from the pink cherry blossom trees to freshly ground dried ume, freshly roasted and hot black or white sesame seeds or fresh edible petals. The only complaint? We couldn't stop eating and kept ordering!!! Can't wait for the next popup event. They do cater private events. Ethan's major is Film and Television whereas Jarrett's is undecided. Jarrett does aim to own his own Omakase Sushi Restaurant someday with his end of the money that he makes from The 803 Restaurant events. The current Popup Event continues on for this Friday and Saturday (August 18 & 19).

French Onion & Summer Truffle Soup: Caramelize 15-16 Finely sliced thin Maui onions & several bunches of scallions; Simmer low, throw in 2 tsp of golden cane sugar, 1 tsp of kosher salt, 1 tsp of fresh grated black pepper. 2 cups of freshly homemade beef broth. 1 bottle of white wine. Simmer low 30 min. Toss in sautéed slivered white summer truffles. Put into an oven safe bowl. Fill ¾ full, put a slice of French bread & slices of Gruyere Cheese. Bake for 25 minutes at 375. Drizzle with 1/2 tsp of hot Japanese sake heated in that butter you just sautéed those truffles. Oh Janette Behave!
