Savory cookies, all’Italiana 🇮🇹
Buttery, cheesy, with fresh rosemary and black pepper

Quattrocento Cookies Recipe
Ingredients:
170 g quattrocento cheese (not pre-shredded)
113 g unsalted butter, room temperature
2 tbsp sugar
2 tbsp fresh rosemary, chopped
2 tsp freshly ground black pepper
½ tsp sea salt
156 g all-purpose flour
Steps:
Beat cheese, butter, sugar, rosemary, pepper, and salt until creamy.
Mix in flour just until combined.
Form into a log, wrap, and chill 30–45 minutes.
Slice into rounds, place on a lined baking sheet, and bake at 350℉ for 15 minutes until lightly golden.
Cool slightly and enjoy.
