Roman Volovach grows vegetables on a small 33-acre farm in the foothills of the Carpathian Mts near Truscavets – renowned for its mineral waters. In his words, “love for the land in Ukraine is instilled in children by parents & I am no exception. As a child, I helped grow vegetables - particularly garden strawberries with my brother. After the collapse of the Soviet Union, there was a shortage of everything, including good vegetables. To feed my toddler, I grew tomatoes on the windowsill of a high-rise building, which she ate with pleasure. Eventually, we moved to a village & grew vegetables on a larger scale. I met an old friend who suggested that we build a farm together. In 2013, we installed the first greenhouse.

Now, our life is divided into before & after. Before the war, we wished each other "good night" or "good day" out of politeness. Now, it has a completely different meaning. Despite rockets flying over our hometown & our heads, we find the strength to plant & grow. Compared to this, power outages, lack of water or bread is nothing.

After the collapse of the Union, everyone rushed into the agricultural sector with old technologies which eventually fell into disrepair. However, farmers introduced a new culture of production. Yet everything changed on Feb 24, 2022. Supply chains were broken. Everything had to be restored anew. Many farmers moved from the south & east to our region in the west to restore farms. Unfortunately, the western climate is very different from the east & south, which led to difficulties. They helped as much as they could.

‘He who places hands on the plow & looks back will not reap.’ The war did not break us. We have grown good vegetables & continue to do so. Our motto is unchanging, ‘Healthy & complete food is not a luxury, but a daily human need’. We cooperate with nature because we see the wisdom of the Creator in everything. At the moment, we are carrying out repair work, preparing the soil, sowing seeds for seedlings. We don't think about the bad.

With this week, the one-year anniversary of the Russian invasion, we will be highlighting Ukrainian farmers who are focused on continuing their craft, no matter the challenges.

Oleksii is a 4th generation beekeeper and former professional soccer player originally from Luhansk, Ukraine. Over multiple generations, his family have gone through conflicts and as such, sadly, are no strangers to war. Due to forced resettlement after the Donbas war in 2014, he and his wife Anastasia moved from occupied Luhansk to Kaniv, central Ukraine – 60 miles from Kiev - transporting 30 surviving beehives from the shelling. They sought a home for a long time – moving multiple times before settling in Kaniv - known for its sprawling ravines of acacia trees. Here, they slowly revived and expand their beekeeping operation, innovating by producing sweets such as honey cream and honey with nuts.

In Kaniv, local ordinances prohibit them from taking advantage of the local forest, so hives are placed as close as possible to the forest in fields of populated areas. This slightly affects the amount of honey sourced and blackouts have affected the production of honey sweets. Despite the challenges, Oleksii and his wife adapt and continue manage 300 bee families. Their focus is to work alongside nature as best they can, in the middle of war – knowing that even when at home, safety is not guaranteed, and tomorrow is uncertain.

With beekeeping season starting soon, Oleksii and his wife are actively preparing, aiming to ultimately increase the number of bee colonies managed to 1,000. Their apiary has survived extermination, camps, resettlement and, so far, the current war. Their hope is that it will not reach their city, and that they will be able to continue to work under a peaceful and safe sky. Repost from the ! Introducing Tzuria Malpica a Schochetet (female who performes ritual slaughter) of Boulder, Colorado (Arapaho, Ute and Cheyenne territories)

Tzuria began teaching workshops called Meet your Meat in 2018 with the intention to share the process of harvesting meat (outside of the major facilities) and to give people an opportunity to become more connected to their food. The workshops take place on small farms and through partnership with local meat growers. The project was built around her desire to share the Jewish practices of slaughter and as a woman to demonstrate that with the proper training, it does not matter what gender identity you carry, if this work calls to you, listen. Tzuria and her fiancé now lead workshops centered on and help individuals who want locally sourced and slaughtered meat to have access to these workshops and this service.

Scheita, Kosher slaughter, is typically and historically only performed by men. Tzuria believes that as we redefine our relationships to gender, challenge the gender constructs and create more inclusive community spaces, it is a privilege to have this training and to use it to help empower communities. Tzuria is Mexican/Catholic on one side and Eastern European/Jewish on the other and for her it was important to study the traditions of her Jewish heritage which detail the practices around slaughter and right relationship with our food.

Alix Daguin is a passionate 9th generation food entrepreneur, with deep roots in France, where her great, great grandmother owned a farm in Saint-Jean-Poutge. Love of food runs deep in her family. Eight generations of hoteliers, restaurateurs, tavern-keepers,
butchers, charcutiers, and food entrepreneurs came before her, including her mother, Ariane Daguin, the renowned founder of D’Artagnan Foods.

Together, Alix and Ariane, a tight knit pair, founded AOOA – a regenerative silvopasture farm – in Goshen, NY, in 2019, making a years-long dream a reality. Here, their shared goal is to provide responsibly-raised food for a community, as well as a space for people to gather to share a meal, take a class, and connect with a productive landscape.

The vibe at this 14-acre farm is warm, friendly, upbeat, and educational, as they encourage volunteers to come and learn, and offer classes for adults and children alike. Approaching their fourth growing season, they farm about 1600 trees, shrubs, and vines, as well as rotating crops such as apples, cherries, strawberries, chestnuts, hazelnuts, mushrooms, flowers, numerous vegetables, and medicinal herbs. They also raise chickens, geese, sheep, and farm honeybees.

Alix has always had a passion for designing spaces and experiences that connect people to their food and she believes the best part about farming, which includes a lot of hard work, is “seeing this ecosystem and farm take shape: watching the trees going from baby sticks to actual trees with trunks; seeing more and different types of birds around, harvesting crops, growing our herd of sheep, and watching the flowers bloom!” Visitors are welcome to walk around, and partake of the bounty at their farmstand (when open), which not only offers freshly harvested produce, but also teas, syrups, fabrics, and a scrumptious farm-focused menu. AOOA just received the green light from their town’s Planning Board to start working on their next few projects: a farm-to-table restaurant, small-batch distillery, and dairy.
