Wellness Wednesday: My Pumpkin Granola Recipe just in time for fall! 🍁
Prep: 10 minutes
Cook: 25 minutes
Yield: 4 cups

Ingredients
3 cups old-fashioned oats
3/4 cup pecans
1/2 cup pumpkin seeds
1/2 cup dried cranberries
1/4 cup ground flaxseed
1 teaspoon pumpkin pie spice
1/2 teaspoon ground cinnamon
1/3 cup pumpkin puree
1/4 cup maple syrup
1/4 cup coconut oil
1 teaspoon honey
Directions
1. Preheat oven to 325°F. Line a baking sheet with parchment paper.
2. In a large bowl, combine oats, pecans, pumpkin seed, cranberries, flaxseed, pumpkin pie spice and cinnamon; set aside.
3. In a small bowl, combine pumpkin puree, maple syrup, oil and honey. Pour mixture over oats, mixing well. Spread mixture on a parchment-lined baking sheet and bake for 25 minutes, or until golden brown, stirring every 10 minutes. Let cool completely and store in a large Ziploc®.

Labor Day Red White and Blue Cocktail 🍹

Serves 2

3 ounces vodka
Ice
6 ounces blueberry lemonade (Simply Lemonade makes this)
3 ounces sparkling water
Squeeze of half a lime
Garnish: raspberries and blueberries
⠀⠀⠀⠀⠀⠀⠀⠀⠀
DIRECTIONS:
Add ice and vodka in 2 glass glasses. Pour the blueberry lemonade juice over the top; add club soda. Add a squeeze of lime juice, f desired. Stir to combine and serve
Note: This is great with citrus vodka

I used the brand “Simply Lemonade’s” blueberry lemonade.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
To make your own blueberry lemonade: combine 2 tablespoons granulated sugar, 1/4 cup blueberries and 1/4 cup squeezed lemon juice. Combine sugar and 1/3 cup water in a medium saucepan over medium heat, stirring until the sugar has dissolved. Stir in blueberries and bring to a boil; reduce heat and simmer until blueberries have broken down, about 3 minutes. Strain blueberry mixture through a cheesecloth or fine sieve; let cool. In a small pitcher, whisk together blueberry simple syrup, lemon juice and 2 cups water. Place in the refrigerator until chilled.
