✨Chocolatey Caramel Popcorn✨

Need an easy, festive, fun recipe for Vday?! Make this popcorn! It’s ready in less than 20 min and is soooo satisfying. I’ll be enjoying this over the cheesiest rom-com I can find on 2/14. 💖

Popcorn recipe:
Pop some popcorn over the stove. Then, prepare your homemade caramel sauce. Let it cool down a bit for a few minutes. Put your popcorn in a bowl and pour the caramel sauce over the popcorn. Mix to coat it. Pour the mixture onto a sheet pan and drizzle melted chocolate on top. I melted mine in the microwave. It started to thicken so I added some coconut oil to smooth it out for east drizzling. Let the popcorn sit for about 15 minutes or longer before snacking!

💖Caramel Sauce💖
1/4 cup coconut oil
3.5 tbsp maple syrup
2 tbsp almond butter
1/8 tsp pure vanilla extract

Chickpea & Pomegranate Salad .....

She’s back with another salad! Crispy Za’atar Chickpea & Pomegranate Salad with Balsamic Vinaigrette. Used some mixed greens, cucumbers, cherry tomatoes, red onion and feta as well — a blend of Mediterranean & Middle Eastern flavors!

To make crispy za’atar chickpeas, I tossed 1 can of rinsed and drained chickpeas with a generous drizzle of olive oil and a generous amount of za’atar seasoning. Bake for 25 min at 425.

Dressing is ~2 tbsp Dijon mustard with ~3 tbsp balsamic vinegar and 1/2 tsp honey with a pinch of oregano, salt, and pepper.

Amounts above are for 2 people!

still making these SALTED FUDGY AVOCADO BROWNIES at least once a week.
RECIPE
ingredients:
2/3 cup chocolate chips
2 T ghee, butter, or vegan butter
6-8 juicy dates
flesh of 1 medium ripe avocado
2 large eggs
1 tsp vanilla
1/2 cup cassava flour (or gf all purpose or whole wheat pastry flour, or 1/2 cup oats! add to the blender before cocoa powder and blend really well! or blend into oat flour prior)
1/3 cup unsweetened cocoa powder
1/2 tsp instant espresso powder or finely ground coffee
1/2 tsp sea salt
flaky salt for topping
directions:
soak dates in hot water for 5-10 min
preheat oven to 350°F. line 8x8 pan with parchment paper (or if you want them thicker, use a loaf pan and bake 30 min)
in a small microwave safe bowl, melt chocolate chips and ghee in 30 sec intervals, stirring in between
transfer to a food processor – drain dates, then add to food processor with avocado. process for about a minute. scrape sides as needed
wait until mixture is room temp before moving to the next step
add in eggs and vanilla. process for 30 sec
add flour, cocoa powder, salt, and espresso powder and process for a few seconds (until you don’t see flour)
batter will be very thick. i usually have to finish stirring with a spatula. spoon it out and smooth into prepared pan. top with pinch of flaky salt and bake for 19-20 min or until middle is set. let cool for 20 min before slicing

cassava flour brownies..
i’m not trying to tell you what to do, but these cassava flour brownies with sweet cherry buttercream would make a really good dessert tonight 😋🍒
cherry buttercream:
1/2 cup dark cherries (i used frozen), finely chopped
1 stick (or 1/2 cup) butter, room temp
1 3/4 cup powdered sugar
1/8 tsp vanilla
1/8 tsp salt
directions:
using a hand mixer, beat the butter until fluffy, 2-3 minutes
add in the powdered sugar, 1/2 cup at a time, mixing until combined
beat in the salt and vanilla extract, then turn the mixer to medium-high and beat until light and fluffy, about 2 minutes. add in the cherries and any juices
beat on low until combined, then turn to medium-high and beat an additional 2-3 minutes until frosting is light and fluffy
frost the brownies when completely cooled!
for the brownies, i used cassava flour brownie recipe

TRAIL MIX FUDGE..🍪🍥
do you need a quick and easy dessert recipe for tonight .🙃 make this TRAIL MIX FUDGE by cuz it’s the s**t
ingredients:
1/2 cup chocolate chunks
1/4 cup pb and 1/4 cup almond butter (or 1/2 cup almond butter)
1 tbsp maple (optional)
3 tbsp coconut oil
toppings of choice: i did raisins, h**p, chia, walnuts, and sea salt (but you can use whatever you have on hand)
instructions:
melt fudge ingredients in a small saucepan until smooth. pour into a parchment lined loaf pan (i made mine half the size by putting a container of baking soda on its side; this will make it thicker!) and sprinkle on your desired toppings
freeze for an hour. remove from loaf pan and cut into 12 pieces. keep in freezer and allow to defrost for a couple min before enjoying 💛

I love potatoes. I love them sooo much, especially at breakfast! Sautéed potatoes, onion & green pepper with taco seasoning topped with a fried egg, cilantro, avocado slices, and red jalapeño — 🔥
To make pan fried potatoes, I use a cast iron. I make sure the bottom is coated with oil and I turn heat to medium. Add chopped potatoes (no need to cook before!) along with onion & pepper if you’re using and cook for about 8-10 minutes until potatoes are crispy on outside and soft on the inside. Make sure to stir frequently so potatoes don’t burn

Keto muffin cups
if you’re like us, you’re stocked up on cereal because cereal = life
after your next bowl, leave the cereal out and make these PB CHOCOLATE RICE KRISPY CUPS with ingredients you probably have on hand. i’ve seen variations with cheerios and chex cereal too, so use what you have!!
recipe below, inspired by servingupsimplicity granola cups
ingredients:
crisp mixture:
1 3/4 cup rice cereal (i used a mix of onedegreeorganics sprouted brown rice cacao and plain crisps)
2 scoops collagen
3/4 cup creamy peanut butter
1/4 cup maple syrup
1 tsp vanilla
1 tbsp coconut oil, melted
chocolate topping:
1/2 cup chocolate chips
1 tsp coconut oil
directions:
prepare muffin tin by spraying with cooking spray
in a large bowl mix together the crisp cereal and collagen
in a medium bowl whisk together the peanut butter, maple, vanilla, and coconut oil until smooth
pour the peanut butter mixture into the cereal and stir until well-combined
evenly distribute between the 9 muffin tins, pressing into the muffin cups. freeze 1 hour
prepare the chocolate topping by melting together the chocolate chips and coconut oil
evenly spoon the chocolate on top of the crisp mixture and freeze again for 1 hour
store in the fridge or freezer, ENJOY

happy friday friends! i made these whole wheat blueberry muffins the other day, and my entire house smelled like a bakery 👩🏽‍🍳 also snuck in collagen for added protein
i take collagen every day, mostly for joint health and as a source of protein, but the added hair, skin, and nail benefits surely don't hurt 😊
i add it to my morning coffee, but it’s also so easy to sneak into baked goods or smoothies
whole wheat blueberry muffin recipe (with some minor tweaks)
>●●◆ ingredients: ◆●●<
¾ cup milk
1/3 cup olive oil
1 large egg
1 teaspoon vanilla extract
½ cup sugar
¼ cup brown sugar packed
1 cup all-purpose flour
1 cup white whole wheat flour
2 multi collagen sticks
2–1/2 teaspoons baking powder
½ teaspoon salt
½ teaspoon cinnamon
1 cup fresh or frozen blueberries
¼ cup sparkling sugar (i didn’t have sparkling sugar so i just used granulated)
preheat an oven to 400º
line muffin tray with paper liners (12)
in a large bowl, whisk together the milk, oil, egg, and vanilla until smooth
stir in the sugars. add the flours, baking powder, salt, and cinnamon and stir until just combined. fold in the blueberries. divide the batter among the 12 muffin liners (2/3- 3/4 full)
sprinkle the tops of each with sparkling sugar and bake about 18 minutes or until a toothpick inserted comes out clean. enjoy!!
