Classic taco salad
Growing up on a farm, the classic taco salad was a staple! During the summer when we were all running late from outside work, this recipe was the easiest to throw together. And what's great is that each eater can adjust it to their personal preferences. Consider it a weekly meal solution!

Ingredients
For meat
▢1 lb ground beef (I use 92% lean)
▢½ medium onion, diced
▢1 tablespoon of chili
▢½ teaspoon cumin
▢1 teaspoon of dried Mexican oregano
▢½ teaspoon of salt
▢1 15oz can roasted diced tomatoes
▢1 15-oz can red kidney beans, rinsed and drained
For the dressing
▢3 spoons of ketchup
▢1 ½ tsp Worcestershire sauce
▢2 teaspoons of honey
▢2 tablespoons of red wine vinegar
▢1 teaspoon chipotle powder
▢½ teaspoon of garlic powder
▢½ teaspoon of onion powder
▢½ teaspoon of salt
▢⅓ cup neutral oil
For the salad
▢ 2 heads of romaine lettuce, chopped
▢tortilla chips
▢avocado or guacamole
▢grated cheese
▢salsa
▢pepper mustard
Instruction
For meat
STEP 1
In a large pan or pot, brown the beef and onion over medium heat, breaking them up into small pieces using a spoon or spatula.
STEP 2
Once browned, about 4-6 minutes, add chili seasoning, oregano, cumin, and salt. Stir for 30 seconds and add tomatoes and beans. Reduce the heat and simmer for 10-15 minutes or until most of the liquid has reduced.
STEP 3
After cooking, remove from heat and set aside.
For the dressing
STEP 1
In a dressing shaker or small bowl, combine ketchup, vinegar, honey, Worcestershire sauce, chipotle powder, onion powder, garlic powder, salt, and oil. Shake until combined, taste for seasoning and set aside.
For the salad
STEP 1
To serve the salad, start with chopped lettuce. Top with some meat mixture, fries, dressing and any garnishes.
