PASTA with a fresh Lemon Sauce followed by Stuffed Eggplant.

The Eggplant was stuffed with the sautéed flesh of the Eggplant, Guanciale, Cubed Chicken Breast, Diced Mushrooms,Red Onions Garlic, Fresh Basil, Fresh Parsley, Hot Crushed Red Pepper, Bread Crumbs, Three Beated Eggs,and Grated Parmigiano Reggiano!

Everyone at table had a One Stuffed Shell for a Single Bite First Course
to start our meal.

They were very lightly sauced when served as the focus was on the flavor of the Homemade Pasta and Filling.

There was additional sauce on the side for those who wanted it.
