Getting so far in the bracket is truly an honor, and in doing so it made me stop and think about the O.G. For a sec, we share a lot of stuff for all the other things we make cuz we have a lot of fun doing so. But this is the O.G. The thing that started it all. It’s so simple, yet sooooooo complex. It’s a process that dictates our whole day and week Dirty Birds. Everyday starts with us making the bread for this bad boy, our Shokupan dough is the best vessel we’ve tried for it, it’s such a good bun. We hand cut and pound out each breast every Monday and Thursday and brine in our signature sweet tea brine to give it that perfect seasoning, and make the pickles for the week as well on Mondays and Thursdays (lots of them lol) so yeah, we call it the O.G. And it is only a few simple ingredients, but has a complex ex*****on behind it and are excited to go up against the best! So let’s goooooooooo!!!
