At PrimeFish restaurants, sake is a cornerstone of the dining & pairing experience, not an afterthought or a trend — with a program of over 100 sakes across the three restaurant properties.
“Similar to sourcing seafood exclusively from Tokyo’s Toyosu market, and recently becoming the only Japanese Kobe Beef certified restaurant in the Carolinas, we want to be a leader in sake, and offer guests an opportunity to enjoy a sake that is typically only available in Japan,” explained chef, owner and sake expert, Robin Anthony.
At PrimeFish, he is joined by two sommeliers with advanced sake training as well — Terrell Johnson at Omakase Experience by PrimeFish and Derek Leclair at PrimeFish Cellar – making PrimeFish home to three dedicated sake specialists, a concentration of expertise that is rare at any restaurant in the country, let alone in the American South.
Daimon 55 is available in limited quantities. At Omakase, it will be woven into tasting menus as a course-by-course pairing. At PrimeFish Cellar next door — a sushi and sake bar and specialty bottle shop that opened in 2025 — it will be available by the pour and in curated flights for guests who want to explore it at their own pace. At Anthony’s PrimeFish location in Ballantyne, this rare sake will be available by the bottle.
