De acuerdo a mi cultura, llegas hoy, hoy tienes permiso de volver de cruzar ese puente y venir a visitarme, ya está tu foto desde hace varios días, y tu recuerdo ni hablar, ese jamás dejo de estar, y te espero así, con esta sonrisa, que hoy me hace tanta falta y que tanto y tanto extraño, así te espero con ese brillo que llenaba tanto mi espacio y que hace unos años se fue contigo, y que a pesar de tenerte conmigo siempre si me haría mucho bien poder verte, te he visto en mis sueños, me haz venido a regañar y a hacerme ver varias cosas, desde que te fuiste cada vez que regresas en mi sueños me corriges algo, solo una vez volviste y te vi tranquilo y muy feliz en la playa, esa fue la primera vez, haz venido poco pero muy fuertemente, se me ha quedado grabado muy claro cada mensaje que me ha dado, que vienes a darme y dejarme, gordo no sabes cuanta falta haces, mil veces me he preguntado si debí hacer algo más, si me quede corto en cuidarte, en estar contigo, no se, pero por favor la próxima vez que vengas, si puedes hoy mejor, déjame saber si algo me falto loco, porque los años pasan y no puedo sentir la respuesta, sé que nos dimos todo, que compartimos lo que el mundo entero anhela compartir entre padre e hijo, se que fuimos mucho más que eso, Dios te llevo y eso lo entiendo, pero duele que aún quiero llamarte y no estás, hace 9 años que no estás y sigo pensando en llamarte, sigo teniendo el impulso de contarte algo que vi que se que te gusta, sigo comprando Cacahuates por si te animas a venir a verme, acá siempre hay para ti, siempre hay tu espacio, no es un espacio para ti, es el tuyo, el del patriarca que nos orientaba, el del ejemplo que seguimos siempre, tu lugar, imposible de llenar pa.
Hoy que vengas si no te veo, Nina te dejo unas papitas, chocolate y cacahuates, Dom te puso una naranja, yo te dejé las galletas Marias y Mariana la coca y un molito charrua, ya sabes que le sale lo paisa y se luce contigo.
Ven con cuidado, déjame un abrazo que me dure hasta el próximo Noviembre, te puse sándalo, que yo se que era tu preferido, te cante “viejo” y “algo le pasa a mi héroe”, canté Manzanero, y puse a Nino Bravo y al Puma.

20 something years ago I started working in restaurants, my first job in the industry was in Arbys, as cashier back in my hometown Veracruz, few months after I learned how the kitchen worked, food rotation, temps, food quality, inside that Arbys we opened a Taqueria, yes it is weird but it’s real, then I moved to import-export and I loved it but, food was my destiny, came to Utah, my very first job was the Fort Union Cafe Rio, the busiest location back in the day, I was the lobby guy, I remember the manager that hired me told me, “the first 2 weeks you will dream about Cafe Rio”, it was real, for 2 weeks at 3 or 4 am I still felt I was cleaning trays and tables, it was super hard but to me that was like going to RESTAURANT COLLEGE, I learned in those 4 years so much! I ended up as Kitchen Manager, it was so fun, so demanding but beautiful to be part of that group, then I moved to different concepts, Asian, Hawaiian, Mexican, Italian, Pizza, burgers, Greek food, so many different cuisines, I learned so much that I decided to use all that knowledge and put it to serve more restaurants but now as my clients instead of my employers, and I started to work consulting 6 years ago, today I make my living from the combination of my passion for food and my talent to help others, this is something you can do in America and is one more of the reasons why I love this country, because it gave me the opportunity to enjoy my life based in my passion for food and people.

In the pictures is me in 2009/2010 in my food truck, that has been a huge passion for me, the chance to serve my food in different places, now I spent a big part of my life helping the food truck community to thrive; the second picture is from this year in a photo shoot for an interview for a Magazine, it was a very exciting moment to me.

Now Spicy Consulting is my company, and I dedicate all my life to the food industry, I also own Crown Alfajores with my wife but I will tell you guys about it in another time.

I would like to connect with more people in the industry who can be interested in network for opportunities.
